My veggie lasagna and homemade soups/stews are always a hit when shared with family and friends...In the summer, my crunchy and light potato salad gets rave reviews, even by people who don't like potato salad!

The first time I tried to make homemade piecrust, I ended up throwing it across the room! And, when my kids were young, we made the mistake of serving vegetarian 'bean birds' for Thanksgiving...We still haven't lived that one down!

Mexican Bean Salad
Very tasty and colorful salad! I also worked at making this a bit healthier, adding no sugar, less oil, and no added salt - I used 50% reduced sodium beans as well! Since I had used up the rest of my red wine vinegar, I substituted about 1/3 cup of tarragon vinegar, and found it added interesting flavor. We added a touch more hot sauce at serving time just for added zing!

Cheese Sauce Over Cauliflower
Delicious sauce, and just what I was looking for when cooking a large head of cauliflower! I added a little dry mustard and used very sharp cheddar for extra zip!
