Chile Colorado

This was very good! It was a little bland for us at first though so I added some cumin, mexican oregano, and garlic powder. My hubby loved it, but I thought a pinch if chili powder would have really taken it to another level. Thanks for the great recipe!

Pleasant Pork Chops

Years ago I had a friend who made a dish very similar to this one and she refused to give me the recipe. I have been looking for this ever since. I only made one change because when I started making this I realized I was out of bay leaves. So I added a little savory and thyme to replace the bay leaves. Everyone loved the dish and this will be made often at our house. Thanks for the recipe!

Non-Balaya

We had this last night and it was really good! I didn't have green onions or fresh parsley, so I used a large onion and used some dried parsley. Also I threw in a red bell pepper because I had to use it up. Very good! At the end of the hour cooking time the bottom was a little brown, but the brown part was really tasty too. I did cheat a little and put in some creole seasoning with the chicken. Everyone loved it. I will definitely be making this one again!

Chicken with Mushrooms, Prosciutto, and Cream Sauce

I had been wanting to make this recipe for a couple weeks and I finally got a chance to last night. The presentation was nice and the chicken was good but I was really disappointed by the sauce. It was like a stroganoff sauce. Not really what I was expecting, but my fault for not realizing that with the ingredients listed that it was going to turn out that way. Will try again with a different/lighter sauce. Thanks for the recipe.

Mouse's Macaroni and Cheese

The kids really enjoyed this recipe. I did use 2 cups of macaroni, and I uncovered it for the last 10 minutes to let the bread crumbs get crunchy. Worked out perfectly!

Old Time Chicken Divan

We had this last night and it was pretty good. The sauce seemed a little thick and it was a little bland, but for the most part we really liked it, especially the fact that the sauce wasn't from a can. Every other recipe on this site for chicken divan uses cream-of-something. We will be making this one again with a few minor adjustments (maybe another 1/3 c. broth and some garlic).

Jalapeno Popper Spread

Oh my goodness this was sooo good! Everyone raved about it and wanted the recipe. Of course I had to make a few changes-used half sour cream and half mayo, as I am not a huge mayo fan and other reviewers had success that way. Also I used 5 fresh jalapenos finely diced, used panko crumbs with the parmesan, and baked it in the oven. This is going in the family recipe book!

Beef or Chicken Enchiladas

Made this over the weekend and it was great! This was my first time trying verde enchiladas (ususally do the red sauce) and this was all I hoped it would be. Took others advice and doubled the sauce, and added some jalepenos. I made a few other adjustments based on my tastes and this was a winner. Definitely making this one again!

This is one of my favorites! Made it again last night and served with pita bread and bean sprouts and homemade tzatziki sauce. This is so easy and the flavor is wonderful. If you don't want to use soy sauce just increase the oil and lemon juice a little and add a few pinches of salt. Perfection!

Penne Pasta with Spinach and Bacon

Made this last night and it came out great! I didn't make any major changes, I did use bowtie pasta instead of penne, and I didn't brown the bacon in the oil because bacon gives its own grease. Which by the way this recipe does not tell you to drain the grease off your bacon-I did and left a little more than a tablespoon in the pan before adding the garlic and it was perfect. Thanks for the recipe!

Easy Snack Wraps

I am giving 5 stars because of the versatility of this recipe. So many things you could do! I mixed a little ranch with my cream cheese and used spinach herb wraps with turkey, lettuce, and tomato. They were so yummy! I can't wait to try with some more of everyone's suggestions!

Pesto Sauce

This is the same recipe that is in my Betty Crocker cookbook. I tried it last night (first time ever trying pesto) and my husband and I LOVED it! Used it on some linguine and topped with sliced grilled chicken breasts and some fresh sliced tomatoes. Had a salad on the side and it was perfect! Now I know what I am going to do with all my extra basil. Thanks!
