Magic Peanut Butter Middles

These took a little time to make, but were really pretty cookies. When you break them open you are completely surprises with the filling! Excellent recipe and something new for our family. These are excellent. I rolled them in sugar before I baked them, then pressed down with a glass. The cookies themselves were crunchy and the filling creamy.

Sopapilla Cheesecake Pie

I changed it a little after reading the reviews. I used three packages of crescent rolls....it made it easier for me to cover the 9 x 13 glass pan. I pressed those in. Then I mixed 3 pkgs. of cream cheese neufschatel with 1 cup of sugar, 2 tsp. vanilla. Poured that in the crust and topped with a sprinkle of cinnamon. rolled out the rest of the crescent rolls placed those on top. Pressed all the edges. Melted the butter poured it over, then sprinkled only 1/2 cup of sugar all over and some more cinnamon. Baked for 35 minutes then drizzled honey on it. Let it sit for an hour then cut and served. It was an absolute rave recipe with co-workers. Easy, easy, easy and I was told it was good. I never got a piece!

Caramel Popcorn

Super easy and super delicious! I followed the recipe exactly and it was perfect. I popped two dutch ovens of popcorn on the stove. I am not a fan of microwave popcorn....I lightly salted it. My popcorn was warm so no problems stirring it. I sprayed pam on two cookie sheets...mixed up half the popcorn in a large metal bowl and repeated on the second cookie sheet. Very easy and great recipe. I only baked for 30 minutes as we like it a little soft.

These were excellent. I actually made these into a cheesecake. I used a 9 x 13 pan, doubled the cream cheese mixture. It was really good.

Bavarian Style Meatballs

This was good...but I was looking for a bit more "bavarian taste"...not so much the sweet meatballs. I think next time I would add a few caraway seeds to this and maybe another can of sauerkraut.

Bacon-Wrapped Pineapple Bites

Very good. I messed this one up...but it was good. I misread the recipe...did it from memory. I wrapped the pineapple with bacon, put the toothpicks through them and then soaked in sweet and sour. Baked and sprinkled with garlic powder. They were very good.

Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce

I probably messed this one up...but I got confused with this and another recipe...I used the Jiffy mix, added alot of cheddar cheese and two cans of green chilies...the rest of the spices and baked. They were really good....I guess I really didn't use this recipe, just liked the idea.

Sausage con Queso Dip

Very good. I have made a recipe like this for years...however, the recipe I used called for bacon and onions...fry them, drain, add rotel and velveeta and a little milk to thin a bit. Then I served with toasted french bread that I cubed and toast in the oven. Yum!!!

These were easy. Very good...however, I worried the pie filling was too sweet with everything else, so I added a few fresh raspberries on top...no pie filling. They looked pretty and tasted great.

Fantastic Mexican Dip

I love this recipe. My family loved it as well. I cooked the beef with green onions, added garlic, then made a mistake after reading another reviewers addition. I added a can of Rotel to the meat, a jar of taco sauce and cooked it down. I was trying to make a little bigger recipe, so I added an extra cream cheese, then worried about the taco flavoring not being enough. I added an envelope of Fiesta Hidden Valley Ranch Dip mix to it. Layered it and it was excellent!

Peach Upside Down Cake I

This is a very moist, tasty and good cake. I read the reviews about the bland cake. I then added 1 tsp. cinnamon and 1 tsp. almond flavoring. I doubled the recipe and put it in a 9 x 13 pan. I used leftover fresh peaches that I had sliced with a little sugar the night before. I poured the peaches and the juice in the bottom of the pan. It all cooked into the cake and made a very pretty and moist looking cake. Very easy and very good!

Iced Pumpkin Cookies

Good, soft cookies. I like crunchy cookies, but realize there is no way to make a crunchy pumpkin cookie. They needed some added spices, so I added extra.

Green Beans for a Special Occasion

These were good, but I thought it needed a little more flavor...I did add a few things. I first sauted a little bacon until the fat was gone with thinly sliced wedges of purple onion, drained the grease. I then added the pine nuts, green beans a little olive oil and a few tablespoons of balsamic vinegar. This was excellent.

Antojitos Minis

This was a very pretty presentation. I changed it according to what I had on hand and what I like. I used 1 cup of frozen corn, 1 can drained black beans, 1 drained can of rotel ( in place of tomatoes), green onion, cheeses, garlic, salsa. It was really good. I will definitely make this again.

Melt - In - Your - Mouth Shortbread

These were really good, definitely melt in your mouth. When they were done, I iced them with 1/4 cup browned butter, 1 tblsp. of vanilla, 3 tblsp. of milk, then stir in powdered sugar to make a thick glaze. I sprinkled green and red sugars on them. The browned butter glaze was really complimentary to the cookie!
