About this Cook
I am about to move onto a boat, so I am interested in finding/adapting/creating recipes that can be made in a few steps, have an improvisational quality (ingredients are not always readily available) with little fuel, are easy to clean up and yet most divinely delicious.
My favorite things to cook
Desserts, baked dishes, and someday soon fresh fish on the grill!
My favorite family cooking traditions
Baking fresh fruit pies from scratch. Well, that's a tradition in my family anyway. Also I learned to cook by pulling out everything in the fridge and improvising a dish out of what was available rather than following recipes. I see recipes more as guidelines. Sometimes this yields a real dud, but often a surprisingly yummy previously undiscovered dish.
My cooking triumphs
I make a mean corn quiche and guava paste cheesecake that'll make your husband leave you. Just kidding.
My cooking tragedies
Recently, I let the eggplant soak in the salt for too long before grilling it, and oh baby was that nasty! Had to spit it out after one bite and throw the rest away.

Halibut Divine
Yummy. I used twice the cheese, half the butter, a little less oil, and less mustard (1 TSP). I served it with mashed potatoes and broccoli; the sauce was really yummy on the potatoes! Will make again.

Marinated Pork Tenderloin
This was a really flavorful marinade. I've made it twice, once I marinated overnight and the other time only for an hour. Both were good, but longer is better. I didn't have sherry, so I used a little white wine. I'd love to try it with the sherry next time. And it makes a spectacular gravy too!

Zucchini-Coconut Cookie Bars
We loved these; the coconut-zucchini-date mix was surprisingly yummy. The kid who mows the lawn claimed to not like zucs but then asked for more. I omitted the raisins, put the walnuts and cinnamon right in the bars, and skipped the frosting. Mine were halfway between a cookie and cake. They stayed moist for three days, and probably would have stored well, if we hadn't eaten the all!
