About this Cook
I am a mother of two, a girl and a boy respectively, as well as a stay-at-home mom. I live to make my family happy and do so a lot by baking and cooking for them.
My favorite things to cook
I bake as a hobby, so dieting is kind of hard. I have cut back for our house, but still bake for others. I enjoy decorating cakes using the decorating kits along with candies, toys, and other things to make cakes for my kids' and family's and friends' birthdays and such.
My favorite family cooking traditions
My mom would always make what we just called the "candies" around Christmas time every year. They are to die for and just as bad for you! My mom has since stopped making them since they took too much time and just tire her out. I have taken her spot and have actually made 100 of them for my brother as his Christmas present a couple of years.
My cooking triumphs
When my husband starting working at his last job they had a company Chili Cook-Off. There was a dessert category so my husband entered it and asked me to make his favorite coconut cake. He had only worked there maybe a month and took first place above others that entered it every year for years! I got the trophy and prize money for it. Since then I have been asked to make cakes for others along with cookies, brownies, etc. I have also made a few batches of brownies for church where they were auctioned to raise money and each pan auctioned for no less than $20- FOR A PAN OF BROWNIES. I have had people tell me that their cakes and brownies just don't come out as moist and/or fluffy as mine (?). I also have people at my husband's work asking for recipes to the meals he's taking to work that are leftovers from the night before's supper based off how they smell when he heats them up in the breakroom.
My cooking tragedies
The last batch of cookies I made! The edges just browned too quickly. Other than that I don't really know. I made some jalapeno poppers the other day for Father's Day. My husband- who has never eated them- and his father- who LOVES them- said they were really good. I didn't like them and I normally love them.

Low Sugar Oatmeal Raisin Cookie
I still have cookies from this in the oven and it's my first time using this recipe. I doubled the batch- my husband and kids eat oatmeal cookies like there's no tomorrow. I had the edges brown like the second they were put in the oven, which meant that by the time the entire cookie was done the edges were the color of chocolate chips. I had to trim the edges to get even my 3 year old to eat them! The flavor is great, and instead of using ginger I used nutmeg. These are tasty but I think I'll just adjust my usual recipe with Splenda instead of going this route. I usually have people paying for my cookies, cakes, etc., so it was unusual for these to turn out like this for me. I tried flouring the pan and decreasing the heat (I have a double oven so I decreased the heat and preheated my 2nd oven to make sure it was accurate.).
