Maple Walnut Pie

I have made this a couple of times. I used 1 Tbs bread flour and 1 Tbs wheat flour. The second time I used AP as the recipe states. I also used walnut pieces instead of halves. This is very good. I make the crust using a recipe from this site. The crust I like best is in the "Danish Apple Pie Bars II" recipe. Just make sure to refrigerate the dough before rolling it out.

Easiest Spicy Cod

I used a local salsa brand, somewhat less than 2 cups, 1 lb cod fillet and put some sea salt on it. Served over brown rice with vegetables. This was excellent!

Cottage Cheese Chicken Enchiladas

This is excellent! I used hot enchilada sauce and about 1/4 onion. Also, I split this recipe into 2 8x8 pans, one of which I placed in the freezer. This was delicious both fresh and frozen. If frozen, thaw out in refrigerator, then bake at 350 for 35 minutes. Excellent! I served this with Spanish Rice II on this site which is also delicious.

Spanish Rice II

I have used this recipe a couple of times now. I use only 1/4 onion. I have tried it with water, as the recipe suggests, and with chicken broth. Both are exceptional. This is delicious. I served it with the Cottage Cheese Chicken Enchiladas recipe also on this site. It is also delcious.

Snicky Snackies

I have tried this twice. Once without a candy thermometer and one with, because I know I boiled the carmel mixture too long the first time. They came out basically the same. They stuck together in clumps and stuck to the wax paper. I pulled apart the pretzels that I could, but I had to throw the rest away. They either stuck to the wax paper, or were in too large of clumps that were too hard to eat. The coating always seems to get very hard. I don't think I will try these again.

Raspberry Oat Bars

I used a jar of Smuckers Simply Fruit. These were delicious. Even better heated up and adding a scoop of vanilla ice cream. These would also be good with other preserves.

Homemade Bagels

I have made these several times and they always turn out great. I would suggest making the holes bigger and flatten them more. I also made a batch using 1 1/4 cups whole wheat flour, 1 cup of oats, and honey. Also made a batch adding cinnamon and raisins. These always turn out great.

I added cinnamon and raisins and these were quite good. They are not very sweet, but very tasty. I would suggest making them larger than 2" rounds.
