Chicken and Rice Casserole I
This was pretty good. I used two cups of brown minute rice and a half of the package of soup mix and it turned out perfectly. Putting the rice mixture on top of the chicken keeps the chicken really moist, tender and flavorful.

Chicken Enchiladas II
Delicious! My whole family loved it. I used some leftover shredded chicken that I had and simmered it in chicken broth and fajita seasoning for about 10 minutes or so. I followed the advice below about doubling the sauce, but I found that I had a lot left over. But I would rather have too much than too little. I will definitely be making this again!
