About this Cook
I emigrated to NZ from England in 1975, I have 3 children, 2 sons and a daughter, a husband, and two cats. My husband (No 2!!!) is a Kiwi. We have just retired from Dairy Farming, and have built a gorgeous house in New Plymouth.
My favorite things to cook
I love to bake, and I love to make all kinds of breads. I also like to cook Indian, Chinese, and especially, I like to cook traditional English dishes, like Pork Pie, and Mushy Peas with Faggots!
My favorite family cooking traditions
My second son, Vinnie, likes me to do the prodigal son thing when he comes to visit from Wellington (4-1/2hrs drive), that is, hurl a roast of pork into the oven - boring, but he loves it.
My cooking triumphs
I have made some fabulous gateaux for Cake Auctions at my daughter's Primary School, also my eldest son's 21st cake. I am well known for making lots of fancy breads too.
My cooking tragedies
These are many and varied!!! You can't make an omelette without breaking eggs, excuse the pun. I have had exploding baked apples (forgot to score the skin), forgot to put the yeast in bread, you name it, I have done it, or forgot to do it!!! A touch of the mad cow, there.

Yummy Pikelets
Great recipe, very easy. I use buttermilk in my pikelets instead of just plain milk, and it gives a fluffy mixture which makes for a lighter pikelet. Funny how here in NZ and in Aussie they call them pikelets - in the English Midlands that is the name for crumpets. The English name for this recipe would be "Scotch Pancakes".

Moist Carrot Cake
Did not enjoy this recipe - it was too moist, I found it soggy, not nice at all. Sorry. :(

Eccles Cakes
Fab recipe,turn out exactly as they should. For those who haven't made them before, when you turn them over to roll them, only give a few little gentle rolls, they should not be too big, and don't worry if some of the currants show through a little, makes them more authentic!
