Monkey Peanut Butter Bars

Not the best bar cookie ever but pretty good. The bars were too hard to cut when they were refrigerated but the peanut butter frosting melted when it wasn't refrigerated. This could be because I used natural peanut butter. I ended up cutting them after they sat out for a while and then kept them in the fridge.

Panzanella Panini

Fast and easy. Perfect for our 90 degree weather. I used ciabatta take and bake bread and cooked it for about 5 minutes in the george forman grill. Didn't have red onion so I used vidalia sweet onion. I think this would be good with fresh baby spinach instead of fresh basil with a sprinkeling of dried basil over the tomato layer. Will try that next time. Was very good as is.

Nutty Lemon Coffee Cake

good but doesn't taste lemony at all. I even doubled the lemon extract. If you are looking for a lemon coffee cake this isn't it. Maybe if you added some lemon zest. It is a tasty moist cake.

Roasted Cajun Potatoes

I cooked these wraped in foil on a gas grill that was approx 350 degrees. I used fingerling potatoes cut in quarters length wise and only cooked them for 20 minutes. They didn't get crispy wraped in foil but were tasty. If grilling and want crispy try just placing them on foil.

Pico de Gallo Chicken Quesadillas

I received a quesadillas cooker for a gift and always looking for recipes to use with it. This was excellent. I only used 1 lime because my tomatoes were on the small side. Also used very little jalapeno because I didn't want it too spicy for toddler. Everything else was the same. Whole fam gobbled them up.

I thought this was very good. I used the kind with alcohol in it. I marinaded for 4 hours. I used the left over to make quesodillas w/pepper jack cheese, avacado, and cumen.

Crispy Chocolate Log

So I haven't actually eaten them yet. They are in the fridge but I can't imagine this combination of ingredients not being great. This was incredibly easy. I think the hardest part will be washing the marshmallow bowl. I used all natural creamy PB, which I thought might be too runny for this but it seems to have worked out fine. Some one mentioned chocolate seaping through the holes. I pressed the cereal mixture into the pan with my clean hands. I was able to pack it tight and close up the holes. I have very little seepage.

Very good and not too spicy. I used thawed froozen corn instead of canned. Even my 15 month old liked it. I think it would be better with a little crunch like bell pepper, celery OR onion.

Bread Machine Pizza Dough

This didn't work well for me. It was stickier than other pizza doughs I've made but still workable. I used half whole wheat and half all purpas flours. Cooked it on a pizza stone for about 20 minutes and the bottom and edges were burned. Also I think my daughter is allergic to the beer (she had a body rash for 2-3 days and no other explanation for it). Won't make again mostly because of the rash and I like other crusts better.

based on other reviews I used a larger can of pineapple tidbits. I think I did everything else the same. Thought there wasn't really enough sauce. I like saucy sweet sour chicken.
