Cooking is my passion, spending a day in the kitchen preparing a delicious meal for my family is soul satisfying! I have a wonderful collection of recipes that have become family traditions over the years and I love trying new recipes that we can add to our family favorites.
My cooking triumphs
I must say my thanksgiving stuffing is the best! I have created a lot of my own recipes through the years by taste, trial and error, and I've ended up with some delicious unique family favorites. My sons often call me for recipes -Donnie enjoys cooking and Bobby is my biggest fan right now, he enjoys cooking and great food too, he is in college and has already taught me a few things! This year for Christmas I made a cookbook dedicated to my sons and husband with all of our family recipes, it took me 3 months to compile and type my recipes, some were just in my head! - but it was well worth it. The cookbook has already traveled to Florida with my sister and the girls are borrowing it at Penn State! It is important for me to pass on our family recipes to my sons, their families, children and future generations, and it's a wonderful feeling to share the cookbook with other family and friends!

Tomato and Mozzarella Bites
I made these for a party and they are a beautiful appetizer - but the mozzarella balls lacked flavor, the mozzarella roll I usually buy has a much better flavor. I will stick with sliced garden tomatoes and sliced mozzarella arranged with fresh basil on a plate, definitely use salt, pepper and a balsamic drizzle.

Firecracker Grilled Alaska Salmon
Pleasantly surprised! Great marinade for salmon, served with roasted garlic mashed potatoes and steamed asparagus topped with shaved parmesan - what a great combination of flavors and textures! Baked in oven uncovered for 25 minutes at 400 degrees.

Italian Cookies II
Absolutely delicious! I have been looking for a great italian cookie recipe - mission accomplished, I will be making these every Easter - a new tradition! Used a cookie spoon to keep uniform size, do not add more flour, this is a moist cookie dough. Icing suggestions - made the icing according to recipe, divided into 2 bowls. In one I added 1/2 teaspoon pure almond flavoring, one drop of red food coloring and enough milk to thin to a glaze. The other I added orange juice to thin to a glaze, then dipped slightly warm cookie in glaze. Decorated with various cookie sprinkles, crushed walnuts on orange iced cookies - a pretty and delicious cookie, family loved them!
