Pineapple Crisp
This was dessert on a cold, rainy night and it was a 10. Cut the butter down by half and the crunch came out excellent. I added brown sugar to the pineapple as another suggested and it gives the pineapple a nice texture, almost a bit of a chew. This with a big gob of vanilla ice cream on top is a home run! Excellent for a last minute dessert idea as it's all stuff in the pantry.

Grand Marnier Chicken
This is one of my go-to meals for holiday's and other times when I have to feed a lot of people. For Easter I tripled the chicken and doubled the sauce, using oj concentrate instead of juice, and it got raves. I make it a day in advance, adding the Grand Marnier right before putting in the oven and it's a great entertaining meal. The sauce is great not only on the chicken but with rice on the side and it's even better as leftovers. Great recipe!!1

Pasta Pomodoro
This was my last minute Valentines Day dinner. I used canned tomatoes and swapped out the chicken stock for white wine. It was very flavorful and the sauce was good for dipping the bread in. I would totally make this again as it went from an idea to on the plate in about 25 minutes.
