This was delicious! Who would have thought that you could have a vegetable for dessert?? The only thing I would change would be to drizzle some honey over the top right before serving, that way the other rims of the squash get a little sweetness too. Very good, and very simple.

My husband is not the biggest fan of eggplant, but he tried this and LOVED it. very good and very easy to fix on a night when you don't want to stand in the kitchen for an hour. I added a little turkey sausage to the eggplant mixture in the skillet to increase the flavor. Very good! Will make again.

Very easy to make and it was a big hit at my house!! However, in order to cut down on calories, I did away with the breading altogether and I cut the chicken up into small pieces and cooked it in a pan with only cooking spray and then added the onions and peppers when the chicken was almost done. Very good, will be making this a staple in my recipe book!
