Clam Linguine

Tried this tonight and it was excellent. I kept the same amount of butter but added 1/4 cup of white wine. I substituted parsley which I did not have on hand with fresh chive. Onions and extra garlic added to the taste. Would not hesitate to serve to company.

Burgundy Pork Tenderloin

Wow what a terrific and simple meal. I read a few reviews first which proved valuable. I also added brown mushrooms, using not only onion but also shallots. For cloves of crushed garlic topped it off. I alos marinated the entire dish for appox. two hours prior to cooking. The gravy turned out fantastic. Taking some hints from other reviews we used the gravy on the potatoes as well as the meat. I also served fresh yellow beans cooked in two cans of Italian style tomatoes. YUM YUM YUM this will be a regular dish for us now.

Apple Cranberry Stuffed Pork Chops

The glaze was good. I substitued the brown sugar with sugar free pancake syrup. Excellent flavor. I did find the pork chops failed to brown. The stuffing was very good however. I think the next time I will brown the chops a bit more prior to baking. I will also take the lid off the pot for ten minutes while in the oven to attempt to brown the chops more.

This turned out great. I added some cranberries and apple from a pork stuffing that I had left over. It worked out great. Easy to prepare and serve. Will use again for sure

Melt-In-Your-Mouth Meat Loaf

An excellent meat loaf which I did in the oven rather than the slow cooker. Very tasty and easy to make. I substitued brown sugar with sugar free maple syrup for the topping.

Manicotti Italian Casserole

This was a very easy and tasty dinner. I added a few things with the hamburg and sasuage. I added green pepper, onions, and garlic. I also used lasagna as I was out of all other pastas. Worked well. Looking forward to trying it the second day.

Salmon Cakes II

This is the first time one of the recipes off this site was a bit of a disaster. I think it called for far too much bread crumbs. Perhaps next try I will cut back on the crumbs and perhaps add one more egg. It was very dry and failed to stay together for me. Having said that it wasn't too bad in the taste dept. but turned more into a scramble egg presentation rather than patties.

Orange Chicken

This turned out quite nicely. I used no sugar added Marmalade. Perhaps regular would have given the dish a bit sweeter flavor. But for diabetics it is the best solution. Will certainly have this recipe again. Over a bed of rice with a greek salad very good.

This was a very easy and tasty dish. I modified it somewhat using Mushroom soup and added minced garlic to the mix. I also used Italian Sausage. A bit salty tasting but none the less quite good.

A Firefighter's Meatloaf

this was a terrific recipe and very easy to do. I added bbq sauce at the front end as well as a topping in the final stage. It was especially tasty the following day when we had the leftovers. I know a lot of firemen as I was a police officer. Those ladies and gentlemen know how to cook and keep it simple!!
