About this Cook
I am retired with a beautiful wife of 39 years. We have four adult daughters, five grandsons with anotheer on the way. We enjoy cooking for friends and trying new recipes when we are not on the road in our sports car or motorcycle. We spend the winters in Florida and the summers on the Bruce Penninsula. Life is good.
My favorite things to cook
I love Italian food of any kind. Chicken dishes and slow cooker recipes. These are particularly handy when you want to spend the day on the beach or in the garden. I do not like to be tied down to much and want flexibility and spontanaity in my life
My favorite family cooking traditions
My famous spaggetti sauce, baked bean, French Onion soup and clam sauce.
My cooking triumphs
My clam suace, Herb/Lemon chicken, duck with orange sauce, giblets and gravy. Crab stuffed mushrooms, stuffed chicken breasts
My cooking tragedies
Too many to mention but my baking really sucks.

Clam Linguine
Tried this tonight and it was excellent. I kept the same amount of butter but added 1/4 cup of white wine. I substituted parsley which I did not have on hand with fresh chive. Onions and extra garlic added to the taste. Would not hesitate to serve to company.

Burgundy Pork Tenderloin
Wow what a terrific and simple meal. I read a few reviews first which proved valuable. I also added brown mushrooms, using not only onion but also shallots. For cloves of crushed garlic topped it off. I alos marinated the entire dish for appox. two hours prior to cooking. The gravy turned out fantastic. Taking some hints from other reviews we used the gravy on the potatoes as well as the meat. I also served fresh yellow beans cooked in two cans of Italian style tomatoes. YUM YUM YUM this will be a regular dish for us now.

Apple Cranberry Stuffed Pork Chops
The glaze was good. I substitued the brown sugar with sugar free pancake syrup. Excellent flavor. I did find the pork chops failed to brown. The stuffing was very good however. I think the next time I will brown the chops a bit more prior to baking. I will also take the lid off the pot for ten minutes while in the oven to attempt to brown the chops more.
