About this Cook
My name is Dani, I'm 18, and cooking is one of my favorite things to do! I hope to one day marry a rich man so I can stay home and cook all day.
My favorite things to cook
I have the most fun when I'm baking some kind of dessert, but I also really enjoy traditional Mexican cooking.
My favorite family cooking traditions
Most of the recipes I know, I learned from all the cooking classes I've had over the years, but I did learn a bit from my grandma. Our favorite thing to make together was crepes, although she called them pancakes for some reason.
My cooking triumphs
Once I perfected my chocolate chip cookie recipe, I bit into one and was genuinely surprised by how amazing they were. That was when I realized how much I really loved baking.
My cooking tragedies
I knew our baking soda was kind of old, but I just hoped and hoped that it was still good enough so I could make cookies. It wasn't. I ended up with something like... little dead cookie puddles. I was so ashamed that I wrapped them up in foil and hid them where no one would see them so as not to damage my reputation.

Kim's Virtuous Mini Pumpkin Muffins
This is a great healthy muffin recipe. I made a couple of changes... Nothing major. I just used whole wheat flour, and Splenda instead of sugar. With the Splenda change, I calculated it, and each mini-muffin is about 35 calories. Amazing, right? I also used a different blend of spices (1 Tbsp Cinnamon, 1 tsp Nutmeg, 1/2 tsp Cloves, no allspice or ginger), just because that's how I like it. Aside from being healthy, they taste great too. I probably should have halved the recipe because I might try to eat all 48 muffins in one sitting.

Grandmother's Buttermilk Cornbread
Wow. This is the only cornbread recipe I will ever use! This made the most perfect, delicious cornbread muffins ever! My mom said they were amazing, and my boyfriend said it was the best cornbread he'd ever had in his life. I made 12 muffins, because I just prefer muffins when it comes to cornbread, and they only had to bake for around 20 minutes. Absolutely the best cornbread recipe ever!

Oatmeal-Cinnamon Muffins
Pretty good muffins, but definitely not the best recipe I've ever used. I do like that they're fairly healthy, though. I made them just as they are, except I added almost twice the cinnamon. They were still pretty bland, but I like the texture a lot. I would probably make these again, but I'd add some fruit and other spices or something. Also, I ended up making 10 muffins since there seemed to be too much batter for just 8. Even though it wasn't much of a difference, my muffins were done baking after only 13 minutes or so. I can't remember the exact time, but I would suggest that you watch them carefully so they don't burn.
