Spicy Garlic Salmon
This was superb! I used red pepper (cayenne) instead of red chile pepper. The salmon itself came out tender, moist and flaky. The paste mixture was surprisingly mild. I served it with new potatoes and a romaine salad. Very much recommended for ease, ingredients on hand and flavor. Thank you.

Herbed Greek Roasted Potatoes with Feta Cheese
I have made these three times now and they are a sure-fire hit. You can leave them until they get nice and browned and dryer or you can leave them with a little more moisture. Either way, this is a keeper as a basic easy potatoes recipe. I leave out the feta and use artificial lemon juice. Still great.

Zucchini and Potato Bake
This is surprisingly delicious and oh, so simple. I had some leftover chopped chicken which I threw in. I also added a few teaspoons of leftover Italian salad dressing. I put some Parmesan on top and popped into the oven. I cut my potatoes very thick and left the zucchini in big pieces. I think you could use any variation you like. I also put a couple of garlic cloves. I loved it.
