Our breakfast Cake
a day in the life
About this Cook
I'm a 30 something mother of 2 preschoolers. I cooked as a housemother at a home for at-risk teens for 2 years. I learned a lot there as I made 3 meals a day for 10-16 people and stayed within the state guidelines.
My favorite things to cook
I love to bake bread. I'm excellent at breakfast food. I like to make desserts, but mostly because I like to consume them. My husband is an excellent griller/smoker and I like to make veggies for him to throw on the grill. I enjoy making things that my kids like to eat. Although i think they would prefer Kraft mac n cheese to anything i make. ;)
My favorite family cooking traditions
My 3 year old daughter LOVES to help in the kitchen. I think it's because I let her lick off the utensils, but I still enjoy the company. I stay at home and it's important to me that my kids be involved in family life. ANd what's more important to a family than its food?
My cooking triumphs
My husband won't eat breakfast when we go out any more. I have to admit that my country fried steak is pretty darned awesome. Buttermilk is the way to go every time.
My cooking tragedies
Ah, the elusive pie...

Scalloped Pineapple
thanks for reviewing my recipe; great ideas! i never really thought about adding anything to it, i love it so much the way it is. i think that if you make it with whipping cream it will add too much more fat to keep the butter content at one cup, too. the one thing i do to this recipe that VASTLY improves on it is make homemade wheat bread with stone ground wheat flour and use that for the toast. thanks for the pic too!

Avocado and Tomato Salad
This is SUCH a delicious and easy recipe. I recently brought it to a "salad" putluck with a few modifications: i added bacon and shredded mozzarella and i used a red wine vinaigrette. Also, it's important that you use *good* tomatoes, you know, that are actually red and have flavor. i had friends call me months later for this recipe.
