I am a IT professional in the real world. But at home I am this culinary genius that is able to come up with...Okay just wishful thinking. However I do enjoy cooking. I have a great wife that supports me in my culinary learning. I prepare 95% of our meals and she does 100% of the dishes. Which works out well I think. She may differ. We also make wine from fresh grape juice. We don't do fruit wines. Red Zinfandel is at the top of our list. We also roast our own coffee beans and make our own espresso blends. We have a simi commercial espresso machine that we use often.
My favorite things to cook
Anything Italian. But some of my favorites are Eggplant Parmesan, Tiramisu and Italian Bread. I never use jarred sauce. I always make my own. However I do use canned tomatoes. The sauce must cook at least two hours.

Every Sunday we cook tomato sauce with pasta.
My cooking triumphs
When I was eight years old I asked if I could make an omelette. My mother looked at me like I was crazy since I had never cooked anything. She said okay and looked over my sholder. When I was finished she if she could have it. I said sure and was making myself another one when my father walked in. He asked where she had learned to make the omelette and she told him that I had made it. He ended up getting mine as well so I made another one for me. From that day on I loved to cook.
My cooking tragedies
First time I made beans I was about 16. No one told me you had to soak them before cooking them. It took forever.
