About this Cook
We are good buddies that love to cook together and independently. We are both vegetarian, which makes it fun for us to share recipes with each other. Skylar (the blonde) has a two-year-old son that is completely adorable. Beth (brunette) loves to share her food creations with her family and friends. We both have some experience cooking, but have recently taking on more challenging projects. Beth is more of a novice than Skylar but is quickly catching up.
My favorite things to cook
Vegetarian! Especially Indian food. We also like health food, or things that appear healthy but are secretly naughty. And on that note, desserts are another favorite, although we like eating them even better than cooking them!

Fried Tomato, Onion, and Mushroom Ragout
Very good. I substituted crimini mushrooms and used tomato paste instead of wedges (2tbsps paste+1/2 cup water at high altitude). I put the ragout over baked polenta topped with goat cheese. Delish!

Winter Vegetable Hash
This was really excellent. I added more sage and kale. I also only used half the shitake mushrooms and substituted cremini mushrooms for the rest. It still came out great!

Zucchini Patties
Delicious with marinara sauce! No need to add bread crumbs--they bind well on their own.
