Fiesta Stuffed Turkey Burgers

Reviewed: Aug. 30, 2009
Really tasty, even though I modified somewhat based on what I had. I did not use the cheese, but added about 1/3 cup SW style Egg Beater, and they held together fried in my cast iron pan. I'll try the cheese next time. Used garlic powder instead of fresh, extra green onion and no white, chipotle chile powder instead of cayenne, and a chopped roasted Hatch chile instead of red pepper. Served on a corn tortilla roasted over open flame and with the Black Bean Medley that I made with some added chopped yellow squash - yummy.

Mushroom Blue Cheese Turkey Burgers

Reviewed: Feb. 2, 2009
I minced the onion and mushrooms in the food processor and sauteed them slowly in a bit of vegetable oil before adding to the meat. Also substituted about 1 T Worcestershire for the soy sauce. Cooked on stove top and added blue cheese on top. Very moist, very tasty, but next time I will try mixing the cheese into the meat as well.

Lentil and Sausage Soup

Reviewed: Sep. 29, 2008
I used a couple of Buddy's chicken sausages, and since I only had half a bag of lentils, I added about 1/2 cup of pearl barley. Reduced liquid to 6 cups. Sauteed the veggies in a little olive oil, then put everything in my crock pot and simmered on Hi for about 3 hours before adding the tomatoes. It cooked up to a thick stew, and the aroma was tantalizing. I tasted before putting it in the fridge and plan to heat it up for dinner tonight. Very good.

Baked Flounder

Reviewed: Sep. 29, 2008
Sauteed the mushrooms with some sliced green onions for just 5 minutes to release some of the juices before putting into the baking dish, then topped the flounder with panko/parmesan mixed with a little Smart Balance lite margerine. It was really good and light on calories too.

Tortilla Casserole

Reviewed: Jun. 19, 2008
I wanted to add some volume and kick it up a notch in spice, so I browned three chorizo links with 1/2 chopped onion and added that into the layers, plus a can of niblets corn. I used reduced fat Mexican blend cheese and fat free milk, and it was delicious. Everyone at work loved it.
