Purple Plum Pie

Great recipe. Decided to make it a cobbler and save on calories and fat. I have made this many times and like to add different fruits to the plum mixture. My favorite is dried cranberries - adds a tart kick to the sweetness. Have also used blueberries, cherries and golden raisins. Each was great! My neighbor has a prolific plum tree so this will be our go to favorite for years!

Ham 'n' Noodle Hot Dish

Quite yummy. Was looking for a way to use the last of a ham leftover from Sunday dinner. Made a few changes based on what I had on hand. Used a whole bag of frozen mixed veggies in place of the peas, also added some diced celery and garlic to the mix. Used egg noodles and loved the topping. It was super quick and easy to make and my kids ranging from toddler to teenager loved it. Will definitely make again!

Spinach Cheese Pasta

I love spinach and am always keen to try dishes that use it. I did make a few changes to suit my taste. I cooked a few slices of bacon and then sauted diced onion and doubled the garlic amount in the bacon grease. I added the spinach and heated it up. I also used rigatoni pasta as that was all I had. It was very tasty and made for a quick dinner!

Fresh Grapefruit Cake

Good when you make a few changes. I had several fresh grapefruit I needed to use up so I used my juicer and added all grapefruit juice and no milk. I also put in about half a grapefruit finely diced into the batter. It added the perfect tangy kick and really tasted like grapefruit. I also made a glaze of powdered sugar and grapefruit juice to drizzle over it. Made a flavorful cake with the changes!

The Best Veggie Sandwich

Versatile recipe. I made it exactly as described and loved it. Then I started changing out the cheese, left out the sesame seeds and changed the bread. Each time they turned out well. I also put the two halves together and cooked this in my sandwich press. That worked well too. Great base recipe to modify to suit your taste.

Cream of Tomato Soup

Awesome recipe! Very versatile. I have made this multiple times and can't get enough. It is great the way it is written but also good wtih changes. I have added diced celery, carrots and green peppers to the onions and softened those. Once because I ran out of milk I used a can of evaporated milk instead - that made for a creamier soup. I have also added finely diced jalapenos for a hit of heat and also added diced tomatos (both fresh and canned) to change things up. Everytime it comes out great and I get so many compliments. This freezes well and I keep a quart or two frozen.

Ann's Shrimp Etouffee

Excellent recipe. Super easy to make too. Only made a few changes by taking out mushrooms (kids hate them!) and adding about a cup of diced tomatos - had half a beefsteak tomato that I needed to use. Served over rice and it was wonderful!

Baked Shrimp with Feta and Tomato

I have made this twice now. The first time I made it exactly as it was written and served over linguine noodles - it was wonderful! The next time I added diced green pepper and diced onions at the same time as the garlic. I cooked until soft. I found I was out of feta and so used grated parmesan. Served over rice and it was a wonderful and filling dinner. Kids liked it better with parmesan (they aren't fans of feta!). Highly recommend as a quick and filling meal!

White Chocolate Macadamia Cranberry Dreams

Very soft and delicious cookies. I used Hazelnuts instead of Macadamia and they were still as good. I have made these several times for cookie exchanges and holiday gifts for friends. Each time they are eaten quickly and the compliments flowed. I do have to bake them for about 14-15 minutes to get them done but otherwise great recipe!

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

What a delicious dish! I have made this several times and it takes substitutions or additions very well. I have added pine nuts, mushroom, garlic, onions and replaced the Blue Cheese with Feta, added Oregano and Basil and also wrapped the bacon around the chicken and baked it instead of putting the bacon in the stuffing. Any combination I make has turned out well and this is my go to recipe for guest dinners. I can make it ahead of time and take it from the fridge to the oven when I get home from work! It always looks like it was difficult to make and my guests love it!

Cranberry-Pumpkin Cookies

Super moist and very good. I have made these multiple times and each time they turn out great. Rarely do they last long as the kids/co-workers gobble them up! They also take additions well and I have added white chocolate morsels or different spices such as ginger or nutmeg. These cookies always stay soft and aren't too sweet. Excellent recipe!

Roast Beef with Coffee

Very moist and flavorful. I didn't mince the garlic cloves though. I just inserted them whole into slits in the meat. Before serving I pulled them out, mashed them up and added them to the mashed potatos I was serving as a side. Yum! Had plenty of juices to make gravy. Made a great meal and super easy too!

Apple Squares

Excellent treats. Turned out very moist and flavorful. Filled my house with a wonderful apple, cinnamon smell that brought my neighbor over to see what I baked! I did double the recipe and made a 16x9 size pan. I also added a 1/2 tsp each of cloves and nutmeg. Really kicked up the flavor. Will definitely make again!

French Veal Chops

Just ok. Followed recipe exactly except did add diced garlic with the onion in the dish. Veal did come out tender but the bread crumb crust wasn't that flavorful. Needed more spices or something. Family wished we had just simply grilled the chops and enjoyed them that way.

Fresh Green Beans, Fennel, and Feta Cheese

This was my first time eating fennel. Recipe is a great way to use it! I did add some sliced tomatos in the last step and they added a great color and taste. Not sure I will make this often as I don't usually have fresh green beans or fennel but definitely something for a special occasion.

Best Guacamole

Decent base recipe but why the olive oil? Seemed unecessary and only added fat and calories. Also sort of bland. If I served it the way it was written to my Hispanic friends they would laugh at me! To make it true guacamole I added finely diced jalapenos, onions, garlics, tomatos and cilantro. After an hour in the fridge it was perfect!

Sausage & White Bean Soup

Very good recipe! Worked well in my slow cooker. I ended up using about 1 1/2 pounds of pork loin I had leftover from dinner the night before. Diced it up and added carrots, celery, onions, garlic and potatos. Lumpy pureed two cans of garbanzo beans and added with the broth. Also added two cans of black eyed peas. Cooked everything with some thyme, sage and rosemary in my slow cooker on low for 4 hours. It came out perfect and creamy. Everyone loved it and it was so nutrious and easy! Now a staple recipe in my house!

Banana Banana Bread

Came out nice and moist. I didn't have enough bananas so I added 3/4 cup unsweetened applesauce and a few spices (vanilla, ginger, cinnamon and nutmeg). Very flavorful and definitely will be my go to recipe to use up over ripe bananas.

Wine and Dijon Marinated Pork Loin

Pronounced as "Excellent" by my teenager. It turned out very moist and tender. I followed the recipe closely except I used a bit more yogurt and added tarragon and sage to the list of spices. Served with rice and veggies. Made for a yummy dinner!

Daria's Slow Cooker Beef Stroganoff

Pretty good recipe. I had to make a few modifications but all in all it was fine. Kids ate it without complaint - which is always a good thing. I used one can of cream of chicken soup (all I had) and one can of cream of mushroom. I used canned mushrooms too. I mixed cooked egg noodles right into the crockpot and served it from the cooking bowl. Made for a quick dinner after sports practices.
