Baked Zucchini de Provence

This was very yummy! I really liked it. I din't have the whole spice mix, so I just did parsely, thime, and chopped fennel seeds. I eyeballed the amt. of oil and spices b.c I was making it for dinner group. I used much less of the topping than it called for. I liked it lighter than really thick on top. And I cooked it for 23 min. at first, and then 7 more w/ topping

Tara's Sweet and Chunky Chicken Salad

This was great! I made it for a picnic, and loved every bite! I used canned chicken for ease, and substituted celery for dill pickle. I added the onion, sunflower seeds and a few extra cranberries. I also upped the amt. of mayo by 2 T. I used salt, pepper, and paprika. YUMMY! Good mixture of flavors. I cut the onion very small and really enjoyed the flavor (I don't usually like onions) alot.

Extra Easy Hummus

This was super good and easy. I did 1 can, 1/4 cup O.O., sesame seeds, lemon juice, salt, pepper,crushed red pepper, 4 small cloves of garlic, and some spoonfulls of the bean liquid.

These were the best! We loved them and couldn't stop eating the batter. Cook at 350 for about 12 min. and they were great!

Italian Spaghetti Sauce with Meatballs

This sauce was ok. It lacked flavor, and needs much more kick. I would add the following next time: garlic salt, more herbs, crushed red pepper. The amt. of onion was good. The meat balls were very moist, filling and good. They cooked well in the sauce. In the future I will probably use bought sauce to save on time, and these meatballs.

Pineapple Upside-Down Cake V

This tasted great. The presentation lacked. I made one 2 layer cake, and one flat cake. The flat one stuck to the pan, and came out funky looking. They all tasted good though. Add nonstick or more butter to the bottom next time.

No Time to Cook Chicken

This was 5 stars b/c of the combination of yumminess and easyness. It was great! We both liked it alot. I was also liking my plate clean. Shred up the chicken in the sauce next time to make it more moist next time. Served over Egg noodles, added a can of mushrooms.

Country Fried Squash

This was really good. We used the corn meal, flour and bread crumb mix. Next time I will probably still add salt/pepper and other spices to it too. They didn't take long, and I put a hole bunch in the pan at once. The thinner pieces were best. Daniel also really really liked them too, and we ate them with ketchup and hot sauce.

Addictive Sweet Potato Burritos

It works perfectly in the oven from frozen. 30 mins wrapped in foil at 350, them 15 mins unwrapped to crisp them up. Better than when I first made them!

Baked Tortilla Chips

We didn't have corn tortillas, so we just used our flour ones, and it still turned out pretty good. We definately overcooked them though, so be sure to be carefull about that next time. They were also really salty - I wanted to make sure they had flavor, but ended up making them too salty. We also just lightly brushed the chips with oil and lime juice and that worked out great. I'd like to try more lime juice nextime, and see if we can make them taste like "hint of lime" chips.

Black Bean and Salsa Soup

I made a few adjustments, and really enjoyed this healthy soup. Even Daniel enjoyed it with his usual sour cream topping. Changes: 1 can of black beans 1 can of black eyed peas 1 can of rotel (used lime and cilantro flavored rotel - very good) instead of the salsa Added spices to liking - red pepper, cumin, black pepper. Sauteed onion and garlic in olive oil to add extra flavor. YUM! We ate this with homemade flour tortilla chips. Had 2 big bowls, and some leftover for work lunch. It was just enough for us, and didn't leave us feeling ill or gassy.

Cha Cha's White Chicken Chili

We made it good. I make very many moderations. 1. Used 1 can navy beans, 1 can kidney beans. Took 1/2 of each can and blended it up to thicken the chili. 2. Used 2 cans of green chilis. 3. Used one can of chicken broth (if not less) 4. Added hotsauce/lime/lemon juice mixture to make it tasty. It was very very bland before we did this. 5. Increased all spices. 6. Used only 1 shredded chicken Topped with Cheese, and ate with our cornbread. I loved it! Very healthy!

Chocolate Chip Cookie Dough Cheesecake

This was good. Easy, but time consuming. I halfed the sugar in the crust, and baked it first. The cookie dough was good, somewhat mooshy in the cake. The cheesecake was also good, as was the extra topping (couldn't really taste it, but it made the top smooth). I baked it at 325 for 50 min (b.c I didn't have the right size pan, and the cake was very deep). I then let it sit in the oven for 40 more minutes after letting some of the heat out. Cooled it for about 3 hours, and it was fine. A little too liquidly in the middle, but still good. Daniel and I had 3 slices together, and no sickness : )

Honey Baked Chicken II

SOOOO good. The sauce is so yummy I would make more! And shred the chicken and pour it all over each bite. *I liked to add a little more curry, Daniel was fine with out it though Made this with rice, and parsley potatoes, and everything was great.

Carol's Chicken Salad

I made this for a kayaking picnic that never happened. We ate it the next day, and really liked it! I did not have water chesnuts or green onions, so I just left them out. I added chopped walnuts for some crunch, and it was great. I really liked it. We even added the cheese and all that good stuff.

Sesame Pasta Chicken Salad

Yum! We loved this! We ate it warm for dinner, and I also had some cold for lunch leftovers - Great either way. We did not have soy sauce, and so we used asian vinagarette - a lot. Add shredded carrots, corn, and thinly diced red bell pepper. This would be good with just the veggies even. Awesome.

Banana-Nut Chip Bread

This was pretty good- Somewhat dense though, and slightly dry. I would probably add more banana's next time, or maybe cut down on the nuts or just chop them up finer. Also, we found they did not need to be baked as long as the directions said, and the crust was pretty hard/dark brown. Overall pretty good though.
