Fabulous Zucchini Grinders
I thought these were great. Not a vegitarian but I had a zucchini from a neighbor to use and this looked good to try. Very yummy! I did dice the zucchini rather than cube it. I didn't have red pepper flakes but used another spicy seasoning I had on hand. I also added a good handful of cheese to the sauce mixture before I filled the hoagies, seemed to thicken it up nicely.

Granny's Banana Bread
I just did not enjoy this banana bread. It had no flavor and was so dense and sort of rubbery. Could barely cut it, I had to pull pieces off it was so dense and rubbery. I followed the recipe exactly and I was just unimpressed. I did give it two stars because I enjoyed the addition of raisins, which I would have never thought of with banana bread. I tried to make muffins in cupcake wrappers with the extra once my loaf pan was full, my little girls love to have banana bread "cupcakes", and they turned out awful. Half the muffin pulled off with the paper as they were sealed completely to the wrapper, maybe that was a result of no oil in the recipe, never had that happen before. It was just a bad waste of my ripe bananas and some disappointed girls who had been so excited for banana bread. I should have stuck to the recipe I always use but I thought I'd give an oil free recipe a try as a healthier choice.

Three Ingredient Peanut Butter Cookies
These are a really quick and easy peanut butter treat. They are pretty heavy on PB flavor like others have said and do go great with a glass of milk. I have made these by this recipe and also used Spenda in place of the sugar. This time I thought I would make them a little extra special by adding a chocolate star to each. I did not flatten them and baked them about 6 minutes, I took them out and pushed a chocolate star into the top of each and put them back in the oven for 2 minutes. I had the chocolate from Christmas baking to use up and it made a really good and fast version of the popular chocolate star cookie. The chocolate also helped to break up the sort of heavy PB flavor these cookies have. Really yummy!
