Southwestern Egg Rolls

These are a family favorite and I've made them (by popular request) many times. The recipe can be tweaked in many ways, and there are even short-cuts. For instance, I've used the "Mexicorn" cans before when running short of prep time. They turned out just great. I must say that I've never fried these - I always always bake them. They come out with a great crispiness but without the unnecessary added fats by frying. A definite keeper.

Sloppy Joes II

The kids loved these!! They were very easy to make, and such a "fun" meal for a family - the messiness makes them fun and kid friendly. A definite keeper.

Salisbury Steak

This was a crowd pleaser. I served it with white rice and peas. I did increase the gravy so we could douse our rice in it. Aside from my patties crumbling a bit, it was great. I did add chopped onions. Will add mushrooms next time to the gravy. Thanks so much for the recipe. It's a keeper!

Fruited Curry Chicken Salad

WONDERFUL!! I used Craisins instead of raisins (because I abhor raisins); I used untoasted pecans; I used much more curry than the recipe called for (maybe 3x the amount? I didn't measure). Otherwise, I followed the recipe to a tee and let it sit untouched for 24 hours to let the flavors mingle. My husband and I had it last night for dinner (kids won't eat curry) and WOW! It was delicious!! My husband went for seconds and thirds. I was afraid none would be left for round two... Thanks so much for the recipe. It's a DEFINITE keeper.

Mexican Casserole

Delicious and kid-friendly. The whole family loved this one and everyone went for seconds!! The taste reminds me of southwestern eggrolls - also a family favorite (recipe on this site). I try to be as healthful as possible while cooking, so instead of cooking the chicken in oil I boiled it, as I usually do. It cooks the chicken quickly and keeps it moist. I then cut the meat into chunks and proceeded as directed with the remainder of the recipe. I did use a whole package of taco seasoning, and I may have added a bit more chips to the top... I used shredded Monterey Jack cheese. My daughter claims that this is her "No. 2 favorite casserole of all-time." I guess that means it's a keeper! Thanks so much for the recipe.

Summer Squash Casserole with Nuts

Wow! I love squash and have a few different recipes for squash casserole - but all are different than this one. The kids were out of town (they won't eat squash), so hubby and I pulled out every interesting recipe we could find. This made it on the list. I have to say that this recipe was FABULOUS! Absolutely delicious! The only change I made to it was doubling the pecans. Thank you so much for sharing this recipe. It's in our "as often as possible" box.

Ceviche

Kids were out of town so hubby and I tried this one last night. The only changes I made were to the fish used and the amount used - we chose 1.5 lb. Halibut chopped into small pieces. Turned out great! We couldn't find fresh limes so we had to use "real" lime juice instead. Having to guestimate the amount in 6 whole limes, I added 3/4 cup and then the lemon. If you like Ceviche, you will like this GREAT base recipe that's very easy to change up (e.g. seafood used and amount used).

Tom Ka Gai (Coconut Chicken Soup)

My husband and I love Thai food and have had this soup at several great Thai restaurants in Atlanta. As always, before using a recipe, I read reviews. Based on many reviews, I doubled the lime juice and added sugar. I also increased the cayenne a bit. My husband and I BOTH loved this soup. It was simple (other than having to run to the grocery to get "fish sauce") and quick. Highly recommended. We will definitely add this one to our "delish" box.

Cucumber Soup

This was a great recipe! It was so hot here in Atlanta today that my husband decided a cool cucumber soup would be great. We had only 2 cups of sour cream, so added 1 cup of plain yogurt. DELICIOUS! Highly recommended.
