Delicious and kid-friendly. The whole family loved this one and everyone went for seconds!! The taste reminds me of southwestern eggrolls - also a family favorite (recipe on this site).
I try to be as healthful as possible while cooking, so instead of cooking the chicken in oil I boiled it, as I usually do. It cooks the chicken quickly and keeps it moist.
I then cut the meat into chunks and proceeded as directed with the remainder of the recipe. I did use a whole package of taco seasoning, and I may have added a bit more chips to the top...
I used shredded Monterey Jack cheese.
My daughter claims that this is her "No. 2 favorite casserole of all-time." I guess that means it's a keeper! Thanks so much for the recipe.
