Spinach Lasagna III
We loved this !! I used a jar of pizza sauce for the "pasta sauce." I used a whole onion, a whole large bag of frozen spinach (thawed in microwave), a whole can of chopped mushrooms. This was delicious, and could easilyl be modified to taste. We will definitely make this again when hankering for a filling, delicious vegetarian meal.

Southwestern Egg Rolls
These are a family favorite and I've made them (by popular request) many times. The recipe can be tweaked in many ways, and there are even short-cuts. For instance, I've used the "Mexicorn" cans before when running short of prep time. They turned out just great. I must say that I've never fried these - I always always bake them. They come out with a great crispiness but without the unnecessary added fats by frying. A definite keeper.

Sloppy Joes II
The kids loved these!! They were very easy to make, and such a "fun" meal for a family - the messiness makes them fun and kid friendly. A definite keeper.
