About this Cook
Enjoy the experience a combination of ingredients creates as it transforms into a symphony of flavors. Never underestimate the power of a simple dish cooked to perfection. Indulge in snacky foods and breakfast at untraditional times. Avidly seek out totally off the wall out of the box recipes. Always leave room for dessert.
My favorite things to cook
Fish and seafood. Mexican, Italian and Thai. Recipes with ingredients I've never heard of.
My favorite family cooking traditions
Southwestern and Mexican Flare are an integral part of a family from California and Arizona. Holiday feasts have grown into gourmet extravagaanzas. Healthy recipes help us recover in between the holidays.
My cooking triumphs
Stumbling upon a fantastic new gourmet recipe because "thats all I had in the house".
My cooking tragedies
A lesson learned the hard way is retained better, an oldy but goody: Salt and Pepper to Taste, Salt and Pepper to Taste, Salt and Pepper to Taste, Salt and Pepper to Taste, Salt and Pepper to Taste, Salt and Pepper to Taste, Salt and Pepper to Taste

Pan Fried Filets with Mushroom Sauce
Altered this recipe to our taste as follows: Used fresh mushrooms instead of canned, used currant jelly instead of strawberry and substituted a fruity white wine for vanilla ice cream. Pan searing the filet made it extra juicy.

Buffalo Chicken Dip
Even with a few healthy substitutions, this recipe was rich and creamy with a great flavor and nice kick. Used Fat free cream cheese and only 1/2 cup of reduced fat cheddar cheese.

Caroline and Brian's Stuffed Mushrooms
Made the following changes: Used spicy sausage, shallots instead of garlic, didn't have cream cheese substituted homemade cajun mayo. Absolutely delicious with a nice flavor and a slight kick. Will definitely make again.
