This is wonderful... I didn't expect to like it, but it is wonderfully refreshing... not a strong beet taste, just complimentary. And the color... gorgeous! Would be wonderful for a party with a tropical theme. I did add a bit more cumin and tahini... and I used key lime juice instead of lemon. (I used canned chickpeas as well... I make hummus all the time and it isn't just convenient - it offers a better texture in my opinion.) I was lucky to get locally grown tender beets, so I found the recipe easy to do and enjoy.
