Southwestern Black Bean Stew
Very delicious basic recipe. I did change it a bit. I didn't have tomato paste on hand so I used 1 can of Rotel Tomatos and 1/2 cup salsa, omitted the water. I also added jalepanos and 1 small onion to the beef for a little spicer dish. Turned out wonderful! Will make again

Chocolate Chocolate Chip Nut Muffins
Excellent! I made them minus the nuts, plus an entire bag of chocolate chips. Everyone loved these. Don't need to change the recipe one bit :)

Easy Mexican Casserole
Very good! I also added the taco seasoning along with jalepenos, onion and green chilis to the beef mix to spice it up. Will make again!!
