Ginger Glazed Mahi Mahi
Ohhh this is good! I doubled the sauce and cooked the fish on the BBQ using foil as previously recommended. My 6 year old son gobbled it up! The sauce would be good with chicken or pork but be sure to make extra!

Bright Blue Monday Cake
Very tasty cake although a bit dry. I used 2/3 Splenda, 1/3 sugar plus the recommended 1/2 t. vanilla. I would suggest adding 1/2 c more blueberries and serving warm with vanilla ice cream.

Picante Marinated Chicken
I like the simplicity of this recipe. I found it a bit bland but would punch up the flavour next time with dried peppers and a bit more Dijon. Thickening the sauce before the final step would help it to adhere to the chicken.
