Avocado, Tomato and Mango Salsa
Diet tip: You don't need to add the oil. Delete it and you can eat it guilt free as it is then a mixture of fresh fruit and vegetables. What a mixture it is - so delicious. Of course leave in the oil if you want the health benefits! I used a large jalapeno pepper and thought I could still handle a bit more heat so will try more next time. Also will add a bit more lime juice as I found the flavor a bit too subtle and want more of it. I used Mango but next time I will try pineapple as the Mango was hard to dice without it turning mushy. Overall a delicious fresh treat!

Best Ever Banana Bread
Spectacular exactly as written with the exception of the cooking time which is a bit too long. In my oven 1 hr. 15 min. was perfect, but at 1 hr. 20 min. the bottom was getting a bit too dark. I don't understand the reviews about 'too sweet'. It was perfectly balanced in my opinion but also keep in mind that if you use very ripe bananas you could easily cut back on the sugar as very ripe bananas have more sweetness than just plain old ripe bananas. I also don't understand reviews that make adjustments that don't work out and then give the recipe a lower rating because of it. eg. Using too many bananas then giving a 2 star rating! Come on - if you alter the recipe and it doesn't turn out, don't blame the recipe!

Wine Soaked Mushrooms
We just did not enjoy this dish. There seemed to be a LOT of onion. I used 2 onions about the size of med-sm apples and removed a about half of them after the saute as there were so many. The remaining onions I cut into smaller pieces than whole slices' to make it easier to blend in with the mushrooms. By the time the dish was cooked, the mixture looked a very unappetizing deep red color and tasted quite strong although I used a nice red wine. Everyone ate some but no one took seconds and no one raved about it either - least of all me. I would not make this again.
