Mexican Bean Salad

To make this even healthier, I cut out the sugar and reduced the olive oil to only a tbsp. or two. It needs no more than that. This is delicious! I had several people ask for the recipe. I subbed garbanzos for the cannellini beans, and used only one pepper and cut out the hot sauce. Excellent for a summer party!

Yummy Honey Chicken Kabobs

I also added pineapples, mushroom and cherry tomatoes to the marinade, which refrigerated for about 4 hrs. Will make again!

Simply Parmesan Chicken

Easy to prepare and very moist! I did not find this dry at all. I imagine if you overcook, it could become that way. I baked mine for 25 min., then flipped before baking another 5 min. I also salted and peppered the breasts before placing them in the egg wash. Will make again.

Parmesan Orzo

Like the previous reviewer, I forgot to add the green onions during the boiling process. However, I inadvertently added them to the cream cheese mixture and it still turned out well! A nice dish for presentation. This is definitely something you want to serve immediately after you make it. If you allow it to sit with the intentions of re-heating later, it loses the creamy texture and starts to clump a bit. Either way, the taste of the cream cheese defintely makes this dish!

Garlic Green Beans

This was great--a good way to spice up regular green beans. I used freshed green beans, and boiled them for 5 minutes prior to sauteing them in the dish. I also lightened up a bit on the garlic.

Chinese Chicken Fried Rice II

I'm not a huge fan of fried rice, but I really liked this one. When making the rice, I replaced 1/3 of the water required with chicken broth since I served this only as fried rice, leaving out the chicken.

Mississippi Mud Cake II

This cake is a sugar overload, but very addictive! You think you've had too much, but then you want more. The second time around, we put a layer of cookie dough on the bottom, then made the rest of the cake on top of that. AMAZING! You will need to adjust the cooking time, but it's out of this world good!

Sour Cream Raspberry Pie

The taste of this pie is wonderful. The only thing I might do differently next time is to add a bit of cornstarch to thicken the mixture a bit. If you don't let it cool completely, it will be a bit soupy, but still very good. Didn't bother me a bit. We also tripled the crumb topping. I think the amount listed is nowhere near enough...at least for my liking!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Two of my favorite desserts wrapped into one?! You can't beat this recipe. The only change I made was to sub the sea salt with regular salt. I frosted half with chocolate frosting, and the other half with cream cheese frosting. Perfect for a birthday!

Sloppy Joes II

This was my first attempt at sloppy joes, and they were delicious! I think the serving size is a bit misleading, because I had 1.25 lb of meat, and it only made 5 servings. So adjust accordingly. I omitted the green peppers, and slightly increased the amount of sauce, though I didn't completely double it. So quick and easy, too!

Garlic-Lemon Double Stuffed Chicken

This recipe is fantastic. I halved it. I normally wouldn't make something like this because of the fat content, however I decided to give it a try. I did use 1/3 less fat cream cheese, and used less butter than suggested. Next time I may reduce it even more because it did pool in the bottom of the dish. But the taste was incredible! I also used a toothpick to hold the chicken together, and left out the garlic salt. I baked it for approx. 38 min.

Roasted Garlic Cauliflower

Never knew cauliflower and broccoli could taste this good! I used a mix of califlower and broccoli. I also added in a little bit cayenne pepper and some onion powder. I also skipped the broiling part, as I don't think it was necessary. After roasting for 25-30 min., I immediately put the cheese on top and then served. Thanks, and will make again!

Salsa Chicken

I think that part of the point of the recipe is to be able to make something quickly. I made the recipe exactly as is, and added nothing extra. I simply omitted the cheese to cut out some fat. I don't think it's necessary to use a bag, marinate, etc. as others mentioned. I recommend preparing this AS IS...it's very moist and simply wonderful! I baked it for exactly 25 min.

Baked Sweet Potato Sticks

These are delicious, and a great alternative to french fries. In fact, I'm not sure that I could tell the difference between the two. In addition to the paprika (which I used more than stated), I added onion powder, garlic powder and chili powder.

Laura's Quick Slow Cooker Turkey Chili

So easy to throw together! I took another reviewer's suggestion and sauteed the onion with the meat. I also subbed one can of the tomato soup with a can of rotel. I also added one 4 oz. can of diced chiles. I made this for a party to save time for all the other food I needed to make, and I could not be more pleased!

Brooke's Best Bombshell Brownies

You have to try these! I didn't change a thing about the recipe short of leaving out the chocolate chips. I noticed that others found the brownies thin, however I did not find that at all. Perfect! Will definitely be making these again.

Soft Oatmeal Cookies

Excellent taste! The only change I made was to substitute the butter with "I Can't Believe it's Not Butter." You can add in extras such as chocolate chips or raisins, but these really are wonderful as is. I also thought the amount of cinnamon was just right. Thanks!

Award Winning Soft Chocolate Chip Cookies

I had always been of the school of thought that you could just simply NOT improve upon a chocolate chip cookie--a chocolate chip cookie is a chocolate chip cookie. But WOW!!! This is ecstasy! I'm guessing it's the pudding, which is such a small price to pay for the experience. I didn't add the nuts. This is now my go-to recipe for CC cookies!

Slow Cooker Spicy Black-Eyed Peas

Good start to the new year! Left out the diced ham, red pepper and jalapeno. Replaced these with rotel, turkey sausage and red pepper flakes. I also added in some kale the last hour. Mine took about 7 hrs. on low, and the beans still had a bit of a crunch to them.

Spinach Dip with Water Chestnuts

You can't go wrong with this stuff. It's so quick to throw together (literally) and presents well in a hollowed out bread bowl. I used the hollowed out bread for dipping pieces.
