Ground Beef Curly Noodle

A great way to clean out your pantry staple items (and yes, Ramen is a staple item for us). We used 2 pkgs (plus two seasoning packets) of Chicken-flavored Ramen instead of the Oriental, and perhaps 1/3 c. of salsa instead of the diced tomatoes--the salsa having more flavor in my opinion. What amazing flavor this has! Will definitely make this again and again. The only reason for four stars is that I'm not certain the leftovers taste will match that as the "just cooked" taste since the Ramen noodles tend to become gummy when leftover.

Sirloin, Pepper and Onion Skillet

A very straightforward dish and simple to follow. An interesting blend of flavors, but nonetheless satisfying. I served this with mashed potatoes. I will certainly try this again as it would be a fantastic filling for fajitas.

Creamy Bow-Tie Pasta with Chicken and Broccoli

I scaled this to 2-3 servings. Such a quick and easy dish with minimal clean-up. I forgot the parm cheese (oops), but it wasn't missed! Will make again because of ease!

Garlic Cheddar Chicken

Scaled this to two servings (going a bit over 2 on each ingredient), and it was fantastic! I replaced the bread crumbs with panko bread crumbs as another reviewer suggested. If you like the texture of fried chicken, and don't want the undue fat and calories, give this a shot. Served with mac and cheese (a recipe from this site) and a salad for Valentine's Day!

Italian Spaghetti Sauce with Meatballs

The flavor was there, but the saltiness of the sauce was too much! I have to say that the meatballs themselves were great, but the 2 tsps. of salt was completely unnecessary. I was able to dilute the sauce at the end with some water, as it was nice and thick. I followed the directions completely, but was just dissatisfied ultimately as the salt was overbearing, in my opinion.

Dijon Grilled Pork Chops

Great marinade. I only marinated for about 1 hour, however it was still flavorful. I substituted orange juice for the apple juice and used the Foreman grill.

Garlic Chicken Stir Fry

Pretty good stir-fry. To cut time, I used chicken which was previously boiled. I didn't put in the fresh ginger because I did have any. It was not missed. I left out the cabbage and snap peas, which were replaced with broccoli. The beauty behind a stir-fry is that they are very versatile!

Feta and Turkey Stuffed Green Peppers

Excellent, and contrary to what others may say, pretty easy to throw together. I left out the fennel seeds and replaced the feta with a smaller amount of shredded sharp cheese because that is what I had. Already planned to make this again. It will make more filling than 6 peppers.

Mexican Bean Salad

To make this even healthier, I cut out the sugar and reduced the olive oil to only a tbsp. or two. It needs no more than that. This is delicious! I had several people ask for the recipe. I subbed garbanzos for the cannellini beans, and used only one pepper and cut out the hot sauce. Excellent for a summer party!

Simply Parmesan Chicken

Easy to prepare and very moist! I did not find this dry at all. I imagine if you overcook, it could become that way. I baked mine for 25 min., then flipped before baking another 5 min. I also salted and peppered the breasts before placing them in the egg wash. Will make again.

Parmesan Orzo

Like the previous reviewer, I forgot to add the green onions during the boiling process. However, I inadvertently added them to the cream cheese mixture and it still turned out well! A nice dish for presentation. This is definitely something you want to serve immediately after you make it. If you allow it to sit with the intentions of re-heating later, it loses the creamy texture and starts to clump a bit. Either way, the taste of the cream cheese defintely makes this dish!

Garlic Green Beans

This was great--a good way to spice up regular green beans. I used freshed green beans, and boiled them for 5 minutes prior to sauteing them in the dish. I also lightened up a bit on the garlic.

Chinese Chicken Fried Rice II

I'm not a huge fan of fried rice, but I really liked this one. When making the rice, I replaced 1/3 of the water required with chicken broth since I served this only as fried rice, leaving out the chicken.

Mississippi Mud Cake II

This cake is a sugar overload, but very addictive! You think you've had too much, but then you want more. The second time around, we put a layer of cookie dough on the bottom, then made the rest of the cake on top of that. AMAZING! You will need to adjust the cooking time, but it's out of this world good!

Sour Cream Raspberry Pie

The taste of this pie is wonderful. The only thing I might do differently next time is to add a bit of cornstarch to thicken the mixture a bit. If you don't let it cool completely, it will be a bit soupy, but still very good. Didn't bother me a bit. We also tripled the crumb topping. I think the amount listed is nowhere near enough...at least for my liking!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Two of my favorite desserts wrapped into one?! You can't beat this recipe. The only change I made was to sub the sea salt with regular salt. I frosted half with chocolate frosting, and the other half with cream cheese frosting. Perfect for a birthday!

Sloppy Joes II

This was my first attempt at sloppy joes, and they were delicious! I think the serving size is a bit misleading, because I had 1.25 lb of meat, and it only made 5 servings. So adjust accordingly. I omitted the green peppers, and slightly increased the amount of sauce, though I didn't completely double it. So quick and easy, too!
