White Bean Spread With Garlic & Rosemary

This is a good recipe, but next time I'll change some things. It did not come out thick like a spread, so I will reduce the liquid. Also, I will blend the beans in the food processor rather than do all that mashing. I thought that was a lot of needless work. Also, the garlic needs to be minced before putting it in the pan. It does not soften quickly enough to mash. The recipe needed a little salt, and I added a little extra garlic powder. Then it tasted good. This is a nice recipe to have on hand. Thanks.

Angel Hair with Feta and Sun-Dried Tomatoes

I made this tonight. It was very, easy and fast. My husband doesn't like cilantro so I used fresh parsely. I had dry sun-dried tomatoes (not packed in oil), so I softened them by soaking them in water for an hour. I used the soak water to cook the angel hair pasta. My husband liked the dish a lot. Thanks for giving the recipe. I'm sure I will make it again.

Beefy Lentil Vegetable Soup

This is an excellent soup, although I wish I had remembered the advice of some of the reviewers who wrote that you should use less water and spicy V-8. But it was good, and next time it'll be better.

Jamie's Cranberry Spinach Salad

This recipe truly is fantastic. I adapted it a little based on other reviews and my personal preferences. I used brown sugar instead of white, and a little less sugar than the recipe called for. I was short of white vinegar, so I added a little lime juice. I used pine nuts instead of almonds and left out the poppy seeds. I also used Craisins. People LOVED it. I'm going to take this to my next potluck this Sunday. The dressing does make much more than you need, so I have enough left over for this Sunday that I don't have to make any more. This recipe is definitely a keeper.

Pesto Sauce

I love this recipe! It's delicious. I've made it with walnuts and with pine nuts, and I prefer pine nuts. I also reduce the amount of olive oil by almost a half. It's a good basic recipe, and you can play around a little with it.

Awesome and Easy Creamy Corn Casserole

I thought this was simple and very good. I'm going to try some different corn bread mixes to seee which one I like the best. It took a little longer to bake than the recipe stated. But the recipe is a winner. I think I'll make it for potlucks.

Baked Garlic Parmesan Chicken

Wow! This is so quick and easy. I really enjoyed making it, and my husband is scarfing it down as we speak. He loves it. I put a little herbamare in the bread crumbs and a touch of Jane's Crazy Mixed Up Salt in the olive oil/garlic mixture. Thanks for a great recipe.

Baked Beef and Brown Rice

Wow! I just made this tonight. It's delicious! My husband is crazy about it, and he's picky. Great combination of flavors. Someone mentioned adding water, so I did add about 1/2 cup of water, and after an hour and a half, the rice was cooked perfectly, and the casserole was beautiful. Also, I didn't have tomato juice, so I used tomato sauce. Still came out great. I'll be making this one again! Thanks! P.S. To answer Pat's question. The ground beef is uncooked when you put it in the casserole.

Betsy's Mandarin Orange Salad

Question: The recipe doesn't say what to do with the onion. Does it go in the dressing or on the salad? This salad has so many good reviews, I can't wait to make it. But I want it to be just right.
