This was a great recipe. Had no eggs so left them out and added half a finely diced yellow and green pepper as they were in my fridge and ready to crawl out! I cut the eggplant in half lenth ways and microwaved if for 6 minutes to soften, then chopped it up and fryed it with the diced pepper and EVOO for a few minutes. Also only used about 1tbsp EVOO to lower calories. Tasted great, didn't put all the parmesan cheese in though as it looked to much so I kept some back to srinkle over the top. Really good, will be a main stay for my weekly menus.
