Vegetarian Phad Thai
This was OK, but like many other reviewers I would say to cut WAY down on the peanut butter and cut back on the brown sugar. It was overwhelmingly peanut-y and a bit sweet for my tastes. Also, I say save the raw chopped/ground peanuts to sprinkle on top at the end. Otherwise would be good with a bit of tweaking.

Fire and Ice Pasta
This was OK. We kind of made it by accident thinking it was something else. We left out the black olives (personal taste) and added extra bell peppers and fresh tomatoes. It wasn't bad, but I didn't love it chilled.

Chicken Enchiladas I
These come out great - one of my bf's favorites. We usually go heavy on the onion, and add some chopped hot peppers of whatever kind we have around - green chiles, red, whatever your taste. And we usually end up using more cheese - sprinkled within and on top. So tasty!
