Colorful Fried Rice

This is a good basic recipe although I think it could use more soy sauce, or something to jazz it up. I use it to clean out the fridge - added red and green pepper, broccoli, chicken - it was colorful, yummy and easy.

Oatmeal Peanut Butter Cookies III

This were excellent. I used margarine, not butter. Although I would have had about 15 sandwiches, only had 11 by the time I got around to making the frosting. They were delicious without and even better with! Had plenty of filling. Can't wait to try one reviewers idea of dipping them in chocolate

Simple Scones

Wow! I never had even thought of making scones before but saw a picture and thought I would give it a try. I was very happy with the results. I had never heard of freezing and grating butter but it was very easy. I could have put it in the food processor I suppose but didn't feel like setting it up. After mixing the dry ingredients and butter I froze everything until the next day when I added an egg and yogurt. I substituted yogurt for sour cream because I can't get it here (I live in Portugal.) Turned out great! Can't wait to try again with other combos.

Burrito Pie

This was good - hot and filling, beans and cheese, can you go wrong? I only gave it a four because I made some changes. Cut the recipe in half and used taco seasoning since I did not have salsa or taco sauce. Covered a shell with beans and placed a second on top (making a bean sandwich) for each shell layer. I will make this again and try freezing it for a quick meal on a busy night.

Southwestern Vegetarian Pasta

This recipe is a fast chile with lots of noodles. I was disappointed because the chile seasoning was too strong and overpowered the cumin and chick peas. I also added one small chile pepper so that may have added to the spice. I don't think I will make this again.

Shearers' Mince and Potato Hot Pot

This recipe is great if you are looking for a simple but filling dish. Instead of peeling and cutting potatoes I used a bag of frozen cubed potatoes. I am sure you could use hashbrowns too. It saved some time and cooked up quickly.
