About this Cook
I'm a mom of four - one teenager of my own (14), and three step-children who live with me - ages 12, 10, and 8. My husband and I have only been married for two years, and he actually does most of the cooking. He's one of those intuitive cooks - he can think about an ingredient and know how it will taste in a dish. I am the " queen of the box mix." I'm all about convenience and speed. And...I'm working on taste ;-)
My favorite things to cook
Wow. I love to cook anything that is really flavorful and tasty, that doesn't have a ton of steps or ingredients, that my family will mow through. Basically - I need it simple, and flavorful, easy to do.
My favorite family cooking traditions
My family is mainly of Swedish heritage, so we enjoy some traditional dishes - homemade potato sausage each year at Christmas, rice pudding. My mother and grandmother used to have a yearly tradition of baking cookies for a solid month before Christmas - so many different varieties. I think this is where my baking ablities came from.
My cooking triumphs
Hah. Of all things, last night I made a tuna casserole EVERYONE loved. I have VERY picky eaters in my household...so when they love something as simple as tuna casserole, it's a win.
My cooking tragedies
Oh, these are probably too many to even think about, so I won't :-) We all have "learning experiences"!

Stuffed Green Peppers I
This was fantastic, and a great dinner for a cold night! I adjusted slightly to add 1 cup of rice instead of 1/2, to stretch the recipe just a bit. I added a little more cheese than the recipe called for, and I didn't have two cans of tomato soup, so I used the one can I had and a can of tomato sauce. It worked out great. Loved the recipe!

French Bread
This recipe was super easy, and tastes great. I only needed about 5 cups of flour.

Salsa Chicken Rice Casserole
My family absolutely loved this dish. I didn't have cream of chicken, so I substituted a can of cream of celery, and added a little chicken soup base just to add the chicken flavor. I also pretty much doubled the cheese, but it was a huge hit with the kids!
