T's Sweet Potato Fries

These were OK. I prefer "Onion Roasted Sweet Potatoes" which is another recipe for baked sweet potatoes on this site. The texture and flavor are so much better suited for this veggie.

California Grilled Veggie Sandwich

OMG! We are total meat eaters around here, and I thought that I would have some resistance from the hubby. Boy, was I wrong! There were no leftovers. So yummy! We cooked the veggies in foil over the grill - for simplicity and clean up. I will be making this again and again. Who knew veggies could be so good?!?!

Love, love, LOVE this recipe. I always add whatever I have on hand...for taste and color factor. Easy to double and make for a crowd. This is a much requested recipe for parties.

My favorite *no fuss* enchilada recipe - fairly healthy too. I always double and bring to friends who've had babies, friends that are sick, etc. It's too easy not to double the recipe and share. We love this!

Boilermaker Tailgate Chili

The *absolute best* chili ever! The longer you simmer the better. The meat turns into a great consistency - great over fritos, rice, WHATEVER. Always a great hit for parties!

Sturdy Whipped Cream Frosting

Tasted great. Was not very 'sturdy'. Did not hold up at an outside birthday party - it *was* pretty hot, but I thought being 'sturdy', the icing would hold up better. It's not suitable for outside parties.

Texas Caviar with Avocado

I've made this before, but not with avocado...what a yummy addition! I also added one bell pepper. This was so good and refreshing from the normal 'dip'. Excellent on a hot summer day!
