Italian Chicken Skillet

I used some of the pre-cooked chicken breast that comes in small bags. I added some cut up fresh tomatoes along with the canned ones; also oregano & more garlic. Yummy ~ and so easy!

No Crust Strawberry Pie

I'm always on the lookout for sugar-free desserts that taste good, since my hubby has to avoid sugar & watch his carbs. He loved this pie - I added a bit of vanilla as suggested by another reviewer. Also used 1/2 vanilla pudding & 1/2 cheesecake pudding since I only had the small boxes. Great with Cool Whip!!

Scalloped Cabbage with Ham and Cheese

Good flavor mix & a great way to use leftover ham. I used the bagged coleslaw mix. This reminds me somewhat of squash casserole, but a bit "lighter."

Feta Chicken

I was one of those who cut a pocket in the chicken breast to stuff it, then securred it with toothpicks. I also baked it closer to 45 minutes, 'cause we like our chicken REALLY done. Great recipe!

Country Apple Dumplings

Such an easy recipe! Due to a diabetic in the house I used Splenda (half white & half of the brown Splenda mix), low fat crescent rolls, diet Mtn Dew & we used sugar free Cool Whip as a topping. Hubby loves these - thanks!

Fluffy Two Step Cheesecake I

For the diabetic in my family, I used sugar free Cool Whip, lite cream cheese & sugar free cherry pie filling for the topping. I put a few drops of red food coloring in the Cool Whip mixture - excellent Valentine's dessert!!

Ham, Potato and Broccoli Casserole

I used hash browns & fried them prior to spreading them in the dish. Just mixed the rest, along with some cheddar cheese, spread it over the potatoes & added some more cheddar on top. Great recipe! It would even make a good breakfast!

Beef Noodle Soup

Wonderful! I used the beef broth instead of boullion, as suggested by others. For the beef, I used left over beef roast from the previous night's dinner. Easy meal - and great with a salad & french bread.

My Meatloaf

I made a couple of changes, but really liked the Italian seasoning in this one. Used 3/4 ground turkey & 1/4 ground beef. Also used herb flavored stuffing mix instead of bread. Excellent served with gravy, green beans & mashed potatoes!

Flourless Peanut Butter Cookies

10/1/08~My hubby is diabetic, so I made these with Splenda & sugar-free peanut butter. Per some others' suggestions, I added a teaspoon of vanilla. It made a dozen cookies - hubby said they are great! 10/24/08~My 2nd review. Threw in a handful of chocolate chips this time, along with the added vanilla. VERY good!

Queenie's Killer Tomato Bagel Sandwich

Excellent! I made these for dinner, adding some deli shaved ham. Used fresh garden tomatoes & placed the fresh basil under them, as suggested by other raters. SO good that I had one for breakfast again the next day!
