Breaded Chicken Fingers

Reviewed: Dec. 13, 2009
I double the egg so that it sticks better. Once they have refrigerated for the proper amount of time I dump the chicken and egg mix into a bowl. Coat the chicken in bread crumbs then RECOAT in egg mix then cover in bread crumbs again. Fail proof way of getting great crunch!! Once they're cooked I brush on a little wing sauce onto them and they are a huge hit!!

Dill Pickles

Turned out great! Except when canning them you don't need the 20 minute bath. If you have a mason jar then just keep them in the boiling water (lids included) until your brine is ready. Then take out the jars, fill them accordingly and seal it with the hot lid. This will seal them without the extra time in the boiling water!

Chinese Roast Chicken with Gravy

Love it! I've made it twice and I'm in the process of making it a third time. I put the sesame oil on the chicken first then the soya sauce. I make sure that I baste it every 15 mins. Add chicken broth to the pan when cooking, it will prevent the soya sauce from burning. So good on egg fried rice!
