French Bread

Reviewed: Dec. 23, 2009
I don't have a bread machine so I mixed the warm/hot water, sugar & yeast & let it proof for 10 min., while I mixed the flour & salt in my kitchenaid mixer. Then I added the yeast mixture & kneaded it for 8 min. I preheated the oven to 170 degrees & then turned off & let the dough rise for about 30 min. Then I rolled out onto floured surface & rolled jelly-style. I placed the roll onto a jelly roll pan. I sliced horizontal cuts in the top of the dough. Then I mixed the water & egg & washed the top of the bread. I sprinkled a few toasted sesame seeds ontop & put back in the 170 degree preheated & then turned off oven to rise for another 10 min. Then I preheated the oven to 370 (my oven cooks hot), and baked it for 15 min. It smells delicious & looks wonderful! I didn't have bread flour so I used all purpose flour. I'm sure it will be even better next time when I can buy some bread flour! The bread was a little thicker than I'm sure it would have been had I used bread flour, but it was still delicious & we gobbled it right up!

I can't believe these are healthy! They are so good! The only thing I did differently is instead of a whole egg, I just did egg white. Came out light & fluffy & yummy!

Homemade Noodles

Reviewed: Oct. 20, 2009
This was a great recipe! I ended up having to add 2 eggs total & about 1-2 TBSP of water to get it to the dough consistency. I rolled it out on a hard surface. Just make sure you roll it REALLY REALLY thin or you'll have thick chunky noodles. I added these to my creamy chicken noodle soup at the end of cooking the soup & it turned out delicious!

Super Bowl Bread Bowls

Reviewed: Oct. 10, 2009
These turned out FABULOUS! I don't have a bread machine so I used my kitchenaid mixer. I doubled the recipe since most said it made smaller bowls. It made 8 normal sized bread bowls for me. I put the warm water, yeast & sugar in a bowl & let it get frothy & double up. In the mixer bowl I put the butter, warm milk, salt & then added the yeast mixture. Then I mixed in the flour. I kneaded this in the mixer for about 5 min. Then I covered with a towel & let rise until doubled. Then I punched down, & made into balls & put them on 2 greased cookie sheets. I covered them with towels to rise for about 30 min. but then I preheated my oven to 170 degrees & shut off & put bowls in to rise faster without the towels on. Then I baked them at 365 degrees for 20 min. My oven cooks really hot so that's why I decreased the degrees. Anyway, I served chili & creamy chicken noodle soup in them & it was awesome!

Corn Tortilla Quiche

Reviewed: Oct. 1, 2009
Really good! Even my kids ate it! I used evaporated milk instead of cream & sour cream in place of cottage cheese. I browned the sausage with chopped onion & minced garlic, and added about 1/2 tsp. salt & pepper to the egg mixture. I also added about 1/4 cup chopped up green onion to the egg mixture. I also added a little cumin too. I didn't have green chilies but I had green chili enchilada sauce so I added about 2/3 can of that & it tasted awesome! It cooked beautifully & smelled really good! I liked this recipe because I could modify it to what ingredients I had on hand. We ate it for dinner but it would be great for any meal!

I didn't use the "guts" of this recipe, just the recipe for the crust. I followed it exactly & it turned out horrible. I've made my own pie crusts before & they've turned out fine. Not sure what happened but it was ok rolling it out but when I tried transfering it it just crumbled everywhere. UGH!!! Tell me what I did wrong!!! :)

Garlic Chicken with Orzo Noodles

Reviewed: Sep. 16, 2009
Really yummy! It was too spicy for my kids though! My hubby loved it, to my suprise! I added double the amount of minced garlic & a little basil too. I also added cooked broccoli & carrots & it was a great main dish! I didnt' have to serve anything else with it! It seemed like there was something missing though. The flavor was a bit lacking. I added some lemon juice too. Anyway, a good dish still!

Gobble Up Granola Snacks

Pretty good! I didn't have rice crispies so I used honey nut cherrios. Still turned out great. I used honey instead of karo syrup & I used 2/3 cup for all the wet ingredients! They still came out a bit crumbly though. NOt dry, but they just didn't stick together too well. I also added a 1/4 tsp. salt, 1 tsp. lemon juice & 1/2 tsp.cinnamon. Made it really yummy!

Baked Asian-Style Honey Chicken

Reviewed: Jun. 25, 2009
This was pretty good. I think next time I won't use so much cinnamon. And I agree that the outside tasted fabulous but the inside wasn't flavored at all. Maybe this could be marinated in the sauce & then it would taste stronger? Loved all the flavors though! Or maybe if the sauce is doubled the chicken would be immersed more in the sauce & soak it up better? Just some ideas... But still a great recipe & super tasty!

15-Minute Dinner Nachos Supreme

This is one of those dishes that looks gross but is very easy & very delicious! I cooked the meat & taco seasoning in a skillet & then cooked the rice, water & tomato soup in my rice cooker & then combined them all together. I added salsa on top & shredded cheese & melted the cheese in the oven on broil for a minute or so. Then we topped with olives & sour cream & ate with tortilla chips. YUM!

This is one of our very favorite dinners! Its super duper easy & so delicious! I use a packet of Au Jus Gravy mix instead of beef consume. It turns out great! I butter the hogie buns & broil them in the oven until golden brown, then I follow the recipe & put the cheese on one side of the bread open faced & the meat on the other & broil in oven to melt cheese. Then we dip these in the Au Jus gravy... YUM!
