Cinnamon Roll Cake

This is a recipe I will definitely use again. I made one to take to a church function and one to stay at home so my poor family wouldn't feel abused and neglected. I was attacked by three ladies last Sunday wanting the recipe and my family polished ours off in no time. Very good and easy!!

Yummy!! I added some garlic and cumin. My 17 year old son was skeptical until he took a bite. He ate 3 more and had some as leftovers the next day. Will def use this recipe many times over! Thanks!

Tender Pork Roast

This was sooo easy and very yummy. I didn't have tomato sauce in the pantry so I subbed a can of crushed tomatoes. I loved that Ididn't have to brown the roast first. It was in and going in 5 min. The meat was fork tender and had great flavor. Will definately make again.

Easy Chocolate Covered Coconut Macaroons

I had never tasted a coconut macaroon before so I have nothing to compare it to, but I really enjoyed these. They were so simple to make and even though I'm not a huge fan of coconut I found it hard to stop eating these.

Queso Catfish

Because many people had problems with the cooking time, I read the directions on the package of my fillets. They suggested 20-25 min at 375. It definitely took a full 25 minutes, probably a couple more. Overall, I thought the recipe was okay. I would have liked more crunch. I may try again and omit the rack and place the fillets directly on my baking sheet. I had some leftover nacho cheese from a gathering of teenage girls at my house so that was a very easy way to do the cheese sauce.

Butternut Squash Casserole

So so yummy!! I used a scant cup of sugar and subbed butter for margarine. I also used up some streusal topping leftover from a batch of muffins. I could probably eat the whole pan all on my own. Delish!!!

Quinoa with Sweet Potato and Mushrooms

I'm not sure what I think of this one. Admitedly, I subbed the cayenne with cinnamon to make it more kid friendly but it seemed like it was a bit blah. I wasn't shy with the onion or garlic so I expected it to have more flavor. But, I still like the concept and think it has potential.

Brazilian White Rice

This was fabulous! I used my rice cooker to saute the onions, garlic, and then the rice. Then used maybe just a smidge less than 4 cups of chicken broth. It turned out perfect! This will be my new standard method for rice.

Easy Southwestern Salad Dressing

I was truly surprised at how much I enjoyed this dressing. I diced up two leftover chicken breasts I had grilled with BBQ sauce. Tossed that into some spinach and romaine along with some black beans, diced tomatoes and avocado. Very yummy summer meal that I am sure we will make again.

Orange Glazed Broccoli

I liked it. Was very easy and quick to prepare. I will likely make it again. It's a nice way to give a little extra flair to the broccoli and healthier than going with a cheese sauce. maybe I will experiment with the ingredients and try to take it to 5 stars ......

Stewed Cabbage

I loved this but I am a veggie lover. Kids ate it pretty well. As I prepared it I realized that it had many of the veggies Dr Oz had recently reccomended for avoiding cancer so that is a major bonus. After I had that thought, I tossed in some carrots and a bit of turmeric to make it even healtlhier. One thing I may do differently is thicken the juice up with some cornstarch.

Creamiest Rice Pudding

Mmmmmm, I am eating my third bowl right now. This is sooo yummy. I wanted to use up some leftover rice so I tried my own little experiment. I added 3 cups of cooked rice to the warm milk and sugar in my slow cooker and let it go for three hours. I thought perhaps there would be a lackof starch to thicken it properly and I was right. So I added approximately 1/4 c of cornstarch dissolved in a bit of milk (didn't measure cornstarch or milk) and let that cook a few minutes. That thickened it up nicely so I added my eggs, salt, vanilla and cinnamon ( and decided to throw in some freshly grated nutmeg, because that can't be wrong). I left out the 1/4 c milk because I had already added some with my cornstarch. Let that cook for the 20 minutes and then we dug in!! Very very good. This one will be enjoyed time and again.

Pulled Chicken Sammies

Very good. Well received by the kids, will make again. This is what I did differently. I used some chicken hindquarters I had in the freezer (bought them on sale for .49/lb so even cheaper than original recipe) Since they had skin and bones I first put them in my big roaster with all of the necessary ingredients for chicken stock. After they had simmered an hour or so, I pulled out the chicken, picked the meat off of the bones and threw the bones back in my stock to simmer for several more hours. I put the meat in my slowcooker with the sauce in ingredients on low and let it go. I checked it after a bit and thought the sauce was way too thick so I just spooned in some of the stock. Not sure how much, just until it looked good. Since I don't add salt to my stock I added a bit of salt to the chicken in the slow cooker. I was very pleased with the results and the leftovers were good as well. What I will likely do next time, toast my buns under the broiler, top with meat and some type of cheese (mozz??) and broil until the cheese melts.

Sunny Anderson's Shepherd's Pie

I couldn't find zuchinni, so I subbed peas, carrots, and a bit off shredded cabbage. May throw in some corn next time, but I am sure there will be a next time. This was very good and enjoyed by all.
