About this Cook
Hubby and I have been married since 9/07 and we're expecting our first child 9/09. I'm an elementary school music teacher for grades Pre-K through 5 and lead a busy life. Sometimes it's hard to find time to make a good meal amidst everything I do. I would love to learn some things that will help me be a good wife!
My favorite things to cook
I have found I'm good at all things baked, and getting better at stir-fry type meals and casseroles.
My favorite family cooking traditions
My German/Irish family pretty much slathers everything in butter. Unfortunately. Lots of Christmas and holiday casseroles and sweets.
My cooking triumphs
Manicotti & Shrimp Scampi. My husband loves them!
My cooking tragedies
Lasagna. I forgot to put on the foil and the cheese was really burned.

Spanish Rice Bake
We loved this. I did alter a bit, since I'm pregnant and get heartburn from EVERYTHING!! I omitted the chile sauce, cumin, and cilantro. I also used two fresh diced tomatoes instead of canned. It's delicious- and it's a great make-ahead-and-freeze for after the baby comes. Thank you!

Zucchini Bread IV
I subbed 1/2 c unsweetened applesauce for half of the oil, used half white and half brown sugar, and added a crumb topping as suggested by a previous reviewer. It was amazing. Also, I even messed up the first batch because I had been using a 3/4 c measuring cup thinking it was the 1 c when I measured out the flour...but though it required a slightly longer baking time (and came out a bit wetter and eggier), it was still fantastic.

Ground Beef and Rice with Cheese
This does have a pretty nice taste to it. I made it for my husband and myself one Sunday night when we wanted something quick and tasty. We used ground turkey instead of beef and liked the way that turned out- however, I love cheese and I think next time I might ad twice as much. Just wasn't quite enough for me. Also, didn't fit in a 1 Qt casserole- I had to use my 2 Qt.
