Buttermilk-Battered Calamari
What is it that makes this so incredible? The buttermilk? The ratio of salt/pepper/flour/oregano? I've used the buttermilk and this flouring ratio on Squid, Tilapia, and Catfish - great each time.

One Bowl Brownies
Excellent brownies that have never stayed in the pan long enough to dry out.

Pro Ganache
Exquisite. Just try and save a little for the baked good(s) you're trying to cover. I subbed a tsp of Frangelico for the vanilla once, and it was still great. Go simple, dip some roasted/salted almonds into it and take a trip to bliss. Use your best chocolate here, Ghirardelli at least - it's worth the money.
