Christmas Breakfast Sausage Casserole
As most people have mentioned, this is a good basic recipe that's easy to personalize. I used lite smokey links instead of ground sausage (no need to pre-cook, just dice and go!). Mixed 6 eggs, salt, pepper, a tsp of ground mustard, a few dashes of Frank's Red Hot. Added 6 pieces of untoasted wheat bread (crusts cut off, cut into 1 inch pieces). Mixed in about a handful of colby jack cheese and put another cup or so on top. Very good! Didn't have a problem with it being soggy in the middle like I have with previous breakfast casseroles.

Cashew Chicken Casserole
This was ok, but probably not something I would make again. I used a bag of frozen stir fry veggies. I was worried about it being soupy so I just used one can of soup- creamy chicken and mushroom for the best of both worlds. I also used spaghetti noodles instead of macaroni. Edible, but definitely nothing special.

BBQ Chuck Roast
I thought the flavor of the beer was overpowering, and we cook with beer all the time (I know it all depends on what type of beer as well, but what we used just didn't work!). Next time we'll leave the beer out and just add a little vinegar. I also added a few TB of brown sugar while it was simmering on the stove. I was hoping the basting sauce would thicken up during the cooking phase but it stayed quite thin and watery. Definitely not my favorite way to prepare this cut of meat.
