Zucchini-Chocolate Chip Muffins

OMG - these are fabulous! Very easy to make and taste delicious. I made my first batch with my four-year old daughter this morning - followed the recipe as is, but excluded the walnuts. The second batch is in the oven as we speak - experimenting with half wholewheat flour this time. I used a yellow zucchini (because that's what I have growing in the garden) and you can't see or taste the zucchini at all. Will be making these on a regular basis. They beat the zucchini brownies hands down!

Lemon Yogurt Muffins

These are great muffins that remind me of Lemon Drizzle Cake that is popular in England. I use half wholewheat flour instead of 100% all purpose. Really light and fluffy, with a great lemon flavour. Always gone within a day at our house!

One Bowl Chocolate Cake III

This recipe makes a nice, moist and dark chocolate cake. Very easy to make and great results. I've used it for two birthday cakes recently, using the fudge icing from the Buttermilk Chocolate Cake on this site. Great combination and no actual chocolate used, just cocoa powder. Enjoy!

Jalapeno Jelly

We had our first vegetable garden this year and grew a few too many Jalapenos! This recipe is ideal for using up quite a lot of them and it tastes great! It's quite sweet with a really good tangy kick. Very easy to make. I didn't bother with the food colouring or adding the chopped peppers at the end. Everyone who's tried it loves it!

Grandma's Egg Custard Pie

What a delicious and smooth egg custard pie! It was a little on the sweet side, so it may be too sweet for some people's tastes. I didn't bother with scalding the milk, just added it cold. Very easy to make. Tastes best when served chilled. Yum yum! Is sure to become a favourite in our house.

Zucchini Brownies

I love this recipe! I did leave out the nuts, but other than that I followed the brownie recipe to the letter. I also left off the frosting and just dusted with icing sugar when cooled. I made a batch and within a day they had been eaten up! My husband and daughter love them. The second time I made them, I used peeled marrow (summer squash) instead of the zucchini and left out the salt. I had to drain the grated marrow a little, but the recipe worked a treat. This recipe will be used again and again.
