About this Cook
I'm 23. A recent college graduate who can't find a job in her field because of the situation that is our economy. I live with my amazing boyfriend, though he has a job that requires him to travel for up to a month at a time. We have two cats, Fiyero and Ginny, who are our surrogate children. I am a substitute teacher (the nice one, the kids say) and I work default prevention for a loan company. I love photography and to sew and crochet.

Quick Skillet Chicken and Macaroni Parmesan
This was a big hit, and it reheats well, which is always important for our small family.

Iced Pumpkin Cookies
Two changes- I used slightly more spice than what was called for and added in chocolate chips which turned it into exactly the taste of a recipe I was trying to replace. Sealed in a tin, these stayed completely fresh and moist for the week it took from them to be gone.

Garlic Cheddar Chicken
Very good. The chicken came out moist and tender and the parmesan and garlic mixture gave it just enough flavor to not be bland but light enough to easily pair it with a side dish. One thing I will change next time is to not mix the cheeses with the breadcrumbs, non of that stuck to the chicken during dipping so would probably be best just to sprinkle over the chicken. 4 stars because it didn't reheat well, and leftovers are important in this house.
