Basic Cheese Polenta
After I started making this recipe, I realized I didn't have any cheese...so I made it without it. It still turned out very tasty! I stirred in about 1/4 up fresh corn kernels and poured into a cake pan so that it would have a shape. After it had set, I cut it into pieces and fried in evoo, topped with homemade tomato sauce - DELISH!

Terry's Texas Pinto Beans
The beans were definately tasty! We ate them with tortillas, sauteed veggies, cheese and avocado. They are even better a day later. Next time I will soak the beans overnight. They took about 3 hours to become soft enought for our taste and I had add about an extra cup of water.

Big Al's K.C. Bar-B-Q Sauce
Wow! I just made this bar-b-q sauce and I cannot stop taste testing! It is sweet, but spicy (but not too spicy) and the color is gorgeous. The only ingredient I did not use was the liquid smoke and this only because I'm in Europe and it's not readily available. But I'm sure it would make it just that much more delicious. I will definately make this sauce again.
