Microwave Oven Peanut Brittle

This came out a lot darker than the picture but that's probably because I threw everything in all at once except for the baking soda. Opps. Also, didn't have nuts so used a half cup of peanut butter. Tastes good though and my dog likes it too.

Eggless Ginger Cookies

Pretty good. I baked them for 7 minutes. I didn't roll them out, just spooned on to sheet and flattened with a glass. Not as pretty as the picture but not bad tasting at all.

Scalloped Potatoes and Onions

I used some 2% sharp cheese and some Tuscan spices a friend of mine gave me for the seasonings. Did microwave it for 10 minutes before I added the sauce and threw it in the oven. Smells devine and I'm almost sure it tastes as good. Oh yes, added some seasoned bread crumbs to the top before I put it in the oven. Will cook it for an hour at 325 and check it and decide from there how much longer to cook it. Ok, Max, my dog, wants out and is licking my leg. Gotta go. Enjoy.

Kickin' Collard Greens

I sort of incorporated another recipe for Drunken Greens into this one and had rave reviews from my neighbors and friends. I added more bacon and 1 btl of dark beer and cut back on the chicken broth. Used fresh mustard greens. Only put 1 Tbl of brown sugar in and otherwise followed the recipe. Outstanding.

Stuffed Shells II

Course I changed it a bit. Added black olives and artichoke hearts to the sauce. Put cottage cheese, egg and sour creme with chives (I was feeling really creative) in the shells. Cooked for alloted time and the filling was way to runny so I stuck it all back in the oven at 350 for a hour. Perfect.

Creamy Banana Bread

Absolutely the best I've ever had. I only made one with an extra banana in it. Used walnuts instead of pecans in the center filling. I've already eaten two pieces and can't wait for breakfast tomorrow.

Roasted Red Potato Salad

Didn't have any celery but will next time. Used 1/2 C mayo and 1/2 C Miracle Whip and added 3 tbls Havarti creamed cheese. Used 4 green onions chopped and added them in the last ten min. of cooking time. Truley delicious!

Crunchy Whole Wheat Cookies

These were fabulous! I followed the recipe but added a tsp of ginger to the mix. I used Smart Balance instead of margerine or butter and Canola Oil for the shortning. Pretty darn healthy considering they taste that good. According to the red lines...I can't spell at all.

Baked Buffalo Wings

Well, I waited the whole hour before cooking these baby's I gotta say, boy howdy! These were espically hot. I cooked them for the alloted time on the first side at the right temp but had to turn it up to 425 degrees for the last 25 minutes to crisp them properly. Really good with blue cheese chuncky dressing.

Meatloaf Muffins

These were great. I didn't have all the ingrediants so I used on pkg. of Lipton's Beefy Onion soup mix, 3/4 C water and a head or roasted garlic from last night. They smelled great while cooking and the flavor is not bad at all. I did frost them with mashed potatoes and sprinkled cooked corn on the top. I tried putting a piece of cheese in a couple but it melted and seeped out so next time I'll try a chunk of cheese instead of a quartered cheese slice. Can't wait to pack them in my lunch tomorrow!
