Upside Down Pumpkin Cake
One of my favorite recipes! I've been making this for several years, and it's now requested more than regular pumpkin pie by my family!

Nancy's Chicken in Puff Pastry
Really, really great recipe! However I did make some changes. I cooked the chicken breasts thoroughly (with some minced onions)and chopped the chicken. I also added mushrooms. Next time I will add spinach as well.

Creamed Beef with Rice
I'll try this recipe again - but use cream of mushroom soup instead of heavy cream and cornstarch. I'll also let it simmer longer to tenderize the meat more...maybe try it in a crockpot?
