Chicken and Gnocchi Soup

This was fabulous! I used more veggies and added an extra can of chicken broth (3 total), then followed others' advice about not thickening with cornstarch. Big mistake, but totally my fault for adding more broth! Next time, I will thicken with cornstarch if I add more broth, and I bet it will be perfect! Thanks for the recipe!

Best-Ever Meatloaf

This was awesome, and I mistakenly used regular tomato soup instead of low sodium. I wish I had used 2 eggs as another person suggested because it did need a little more 'binding' material. I omitted the water, and just used the entire can of soup, then spread ketchup on the top after baking. This was so easy & fast compared to my standard one in which I have to cut and saute' onions and bell pepper. Thanks for the recipe!

S.O.P.P.

This was great, and so easy! I used 2 russet potatoes, sliced thin. I browned the potatoes and onions for about 5 minutes before adding the bell peppers (so that the peppers didn't turn to mush), then added pre-cooked lean Jennie-O brand turkey sausage, sliced, and heated until warm. Chicken In Basil Cream

This was great! I used 5 chicken breasts, as this is what came in the package I bought. I pounded them a little thinner, which is key to making them tender. I doubled the milk & bread crumbs since I had more chicken than called for (skim milk works fine, by the way). I doubled the sauce (used half-and-half instead of whipping cream to cut down on the fat) as suggested by others, and was glad I did! I left off the pimentos, just as a personal preference. Chicken Wild Rice Soup I

This was one of the best soups I have EVER had!! I made 2 servings of rice in my rice cooker & added it at the very end. I doubled the celery & carrots, used only 1/2 cup flour (3/4 sounded like a lot, and 1/2 cup was perfect), used a rotisserie chicken off the bone), 3 cans chicken broth, 1 tsp. salt and 1 tsp. curry powder (KEY!), and I simmered it only 30 minutes. Wow! Thanks for the recipe!

Super-Easy Rocky Road Fudge

Big hit! I made mine on the stove, which made it easier to keep the texture correct. I had another recipe almost identical - that one calls for 2 Tbl. butter with the chocolate and condensed milk (makes it creamy!). I omitted the vanilla (didn't think it needed it), and used a full 10.5 oz bag of marshmallows. I used 2 cups peanuts instead of walnuts (just a personal preference). I didn't grease the pan - just put it in a glass casserole dish - didn't stick! Thanks for the recipe!

Cheeseburger Soup I

This was awesome! I doubled the meat, veggies, & spices, and used 3 cans chicken broth + 2 large russet potatoes. I made the white sauce with only 2 Tbl. butter in a separate pan, then added it to the soup mixure (saved time!). I also added 2 tsp. salt to the final mixture. Thanks for the recipe!

Perfect Pumpkin Pie

Hands down, the best pumpkin pie I've ever had! I make it with the gingersnap crust from the "Gingersnap Pumpkin Pie" recipe on this site (adding an additional Tbl of butter to the crust, and omitting the sugar). If using that crust, one tip is to pour the filling almost all the way to the edge, that way, not so much crust is showing (the molasses in the cookies makes the crust look burned, although it isn't). Wow! Thanks for the recipe!

Whole Wheat Refrigerator Rolls

These did not rise for me, unfortunately. I used wheat flour for the entire recipe, and as I read in another review, I probably should have doubled the of yeast. I think I'll give it another try. Thanks for the recipe!

Teddy Bear Biscuits

These were wonderful! I used much more cinnamon (1 tsp.). Next time, I will *heavily* add the cinnamon-sugar mixture to the biscuits, as that's what makes them sweet (plus, it bakes down on them). I baked them on parchment paper, and they turned out beautifully. Thanks for the recipe!

Sesame Parmesan Zucchini

This was great, but I based on other reviews, I, too tweaked the ingredient amounts. I used 5 zucchini, 1 Tbl. olive oil, just a pinch of cayenne (personal preference), and kept the other ingredients the same. I baked at 350 on an ungreased cookie sheet for 12 minutes. Perfect! Spicy Grilled Shrimp

These were wonderful! After peeling my 2 lbs of shrimp, they weighed much less, so I cut the ingredients in half and was SO glad I did (especially the salt amount). I used just a pinch of cayenne, just as a personal preference (I don't like spicy). I just mixed up all the ingredients in a small dish, then dumped it in a frying pan. After heating it up, I added the shrimp (mine were large), and cooked them just a few minutes. Awesome! I served this with rice and "Sesame Parmesan Zucchini" from this site. Thanks for the recipe!

Spiced Applesauce Bread

Following other suggestions, this bread was fantastic! I used 1 1/2 cups applesauce, 1/2 cup white sugar + 1/2 cup brown sugar, 1/4 cup oil, then doubled all spices (including the salt, which it definitely needed). Mine had to bake about 1 hour, 10 minutes. Even at the end, a toothpick inserted in the middle still came out a little wet, but the edges were starting to *really* brown, so I pulled it out. Was perfect! Thanks for the recipe!

Ice Cream Cone Treats

Sophie's Zucchini Bread

This was fantastic! I was lazy and didn't feel like grating the zucchini, nor did I feel like pulling out the food processor and cleaning all the parts afterward, so I just finely chopped the zucchini, and it was fine! I followed other reviewers' advice, and used half applesauce, half vegetable oil. The oil wasn't even missed! I left off the nuts, just to make it more lowfat. Thanks for the recipe!

Fresh Broccoli Salad

Wonderful!! I cut the dressing in half, just because I don't like too much, and was glad I did - half was plenty! I also used lowfat mayonnaise, and apple cider vinegar just to give it more flavor. I would do that again! Just as a personal preference, I left off the onion and raisins. I also left off the bacon because I wanted this as a side dish to a meatloaf (which would have clashed with bacon). I still thought it was excellent! Thanks for the recipe!

Turkey Veggie Meatloaf Cups

These were wonderful! I loved the addition of barbecue sauce on top! I added 1/2 tsp. salt and 1/4 tsp. pepper to the mix, plus 1 tsp. garlic. Would make those same changes again, except use even MORE salt (1 tsp. total). I used regular size muffin cups, and baked them 35 minutes. Note that the couscous doesn't have time to hydrate/cook completely if you eat them without letting them sit for 10-15 minutes after baking; but note that if you let the mix sit for 30 minutes BEFORE baking, the couscous hydrates at that time quite a bit. Just something to consider if you want to avoid crunchy couscous. Thanks for the recipe!

Eggplant -- Easy, Good and Tasty

This was to die for! I used the entire eggplant, so I doubled the egg, water, and bread crumbs. I lined the baking sheet with foil, so no oil was needed. I didn't trim the skin (that's where the vitamins and fiber are!), and would definitely do that again! (The skin was very tender after baking.) Thanks for the recipe!

Pork Tenderloin with Pineapple Salsa
